Having played few RPGs, I'm going to go with Diablo (for some reason have't played Diablo 2 and it's expansions), Overlord and Pokemon Ruby/Saphire.

I don't know but I didn't felt that I was really sucked into Fallout 2 like I was in Fallout 1. Sure Fallout 2 got more weapons, armor and bigger world but I never felt the atmoshpere in it. Which is rather weird because Fallout 1 and 2 is almost the same game though Fallout 2 got more "candy".
Fallout 1 is a truly excellent game but i would much rather play Fallout 2. I prefer the sense of humour in the second and New Reno is my favourite place in any game even though it is smelly and full of hookers. That's not to say the first game isn't top rate but i fail to understand why people think the first is any better.

Definitley the disgaea series, my current favorite is the one for the PS3, it has many more systems in it, i.e a class world and special tower moves, but with DLC every character from games past could be in their, i can't wait until it hits european shores :)

Suikoden 2, Breath of Fire 3 , Planescape Torment and Baldurs gate 2. All classics

I've played quite a lot of RPGs, but 'Planescape Torment', 'Fallout 1+2' and 'Persona 3 FES/4' are the ones that truly burned themselves into my memory.

And for some reason I really liked 'Icewind Dale'.

I recently played a bit of Persona 4, the first time I played a game in that series, and I was pleasantly surprised. Some of the game has pretty cringe worthy moments, but the story became immersive very quickly. I especially loved the character Mr. Burns... I mean Igor. Did anyone else expect him a say "Release the hounds" when he was talking, or was it just me?

I consider Fallout 1 just a prologue, an introduction to the universe. The second game is where everything became fully fleshed out. Also, the first game, although it does have its charms, suffers from massive control and UI issues which make it a chore to play. Like, there's no "Take All" button when you loot, you can't freely trade items with your gang members but they act as merchants, you can't push them out of the way if they're blocking your path, little things but they make the experience very frustrating if you've played the second part too.
