Time to be totally unoriginal.
My male Shepard I first tried to romance Jack (I love me some crazy) but I screwed it up somehow. So I instead went with Tali. In the first ME I tried wooing her and liked her even after talking with her and doing her loyalty mission, so I'm pretty glad I ended up choosing her.

When I finally get around to getting a new "disc one" for ME2 and finish my FemShep play through, I'm going to romance me some Garrus. He's my favorite ME character by far and if I were a women, I would so get into his pants. He's just that cool.

Miranda because she is genetically enhanced hotness. Sorry Ashley, you really blew me off during our last meeting. It's over.

However I would dump Miranda in a heartbeat for Aria. I love her foul mouth.

Tali

I chose her because, and I say this without a hint of irony, her personality. She is intelligent without being nerdy, emotional without becoming whiny and a serious warrior without being bitchy and angry. She also has a subtle attractiveness and vulnerability that is very alluring. Hell, even if romance was out of the question I still want her as a friend.

Other romance options suffer when compared to her. I hate Ashley, I'm bored by Liara and Samara, I don't trust or like Miranda and I can't shake the image of Jack/Subject Zero as an unstable psychopath.

Edit: The body-hugging enviro-suit didn't hurt either! ;)

BTW, I have a Gay friend who played ME2 and he chose Tali too! And he passed on the romance in ME1. :D

Garrus:

I can NOT take this seriously. I mean it literally comes out of nowhere. There is no indication in either game that he has the slightest romantic interest in her. This was just a bone that they threw out to please all of the Garrus fangirls that popped up. I mean really look at this. One minute they're having a general conversation about the upcoming battle, then suddenly you basically have to choose to make Shepard whore herself out to him and he doesn't even believe it himself. Then he suddenly remembers he's a guy and says, "Okay, sure!" That's not to say that he isn't a great character. The loyalty mission of trying to pull him out of his descent into a cold blooded killer is one of my favorite sequences in the whole game. I just think throwing a romance on top of that was completely unnecessary. I mean, they've already developed a close friendship from both games. Why ruin that?
First of all, wow, impressive and interesting first post. With that out of the way, I think you're off on your assessment of Garrus (of course, I understand the subjective nature of this). I really didn't get any kind of bone-throwing-to-fangirls vibe from it at all. I felt it was a rather realistic, heart-warming and charming story arc. For one, yes, it does come out of nowhere. And I feel that Garrus addresses this properly during the game. He came of to me as genuinely surprised when Shepard breaches the topic (and yes, it is Shepard who makes the suggestions). He also takes some time to consider it, and ends up thinking "why the hell not?". The casual nature of their romances, combined with their deep friendship, isn't "ruining" anything to me. They're just two people, realizing they might be dead in a week, and deciding to make the best of the time they have. I see absolutely nothing wrong with that.

Miranda. Her personality and mine fit so well. Oh, the chest and that ass.. Can you really deny such?

Tali was my second choice, but I tend to just say I took both of them. Miranda is just the more potent one for the moment.

..I'm a horrible individual, aren't I?

I didn't pursue a new interest, I decided to stick with the one from Mass Effect 1 as I get the feeling I'll get a good ending in Mass Effect 3.
FYI my choice in Mass Effect 1 was Ashley Williams because I like tough women who are well characterised with flaws and faults but still human personalities, and given that she had great character development over Mass Effect 1, I can't wait to see how it turns out in Mass Effect 3.

Some people said the confrontation on Horizon was her being bitchy, I disagree. If the person I loved disapeared for two years then suddenly walked back into my life and confronted me with the realisation that they were now servants of an evil corporation I'd be confused and upset too. Plus she sent Shepard an apologetic email so no harm no foul.

Miranda, because Kelly Chambers didn't really count, and well my Shepherd is like Kirk, he loves eye candy.

Got jiggy with Miranda and Jack.
Going to get Jiggy with Garrus on my second playthrough.

Shepard: Word around the ship is you got a fat cock.
Garrus: Yes... I do...
Shepard: I've got a fat cock too. Maybe we should rub our fat cocks together sometime. Maybe a little oil. Two fat cocks. Together. Oil.

Oh wait, male shepard isn't allowed to have sex with other men. D:

I've replayed the entire first Mass Effect so I wouldn't have anyone in Mass Effect 2. I know that's going to bite me in the ass, but the fact remains that my first love interest ending up being... well, either way you're pretty much screwed. And after that, you "cheated" on them? A whole new can of worms there, just a huge can of worms. The kind that attach to your liver kind of worms.

Anyways, yeah, I chose Tali because she's the one I wanted in the first one. Every reason I had has already been said, that's what happens when you arrive to the party late.

I've only played through once, but my intention would be the same as the OP for both genders. I was so gutted that I couldn't nail Kelly though. How dare they tease me so!

Yeah, I've had a crush on Tali since the very first game. She is the cutest badass of the team, she is attractive and a huge nerd, what's not to like about her? Also she is a sweetheart, it's adorable how she stutters when you are romancing her up X3 It's all the better when you can hug her.

As for Garrus, he is just plain awesome. Great pal, great buddy, no doubt the character with the most number of traits in the whole game. It's fantastic how he can go from cold blooded badass to heart warming nervous lover XD

I'm going to take a wild guess and say that most people here chose Tali.

Why?

We fetishize vulnerability. It's funny, for me, because I remember on Illium in the bar you overhear a conversation with a Quarian complaining to her Tauren friend about a human being attracted to her due to her perceived vulnerability/weakness.
Funnily enough, that was the precise reason why i didn't want to go with Tali initially. But my other options were Jack (hitting on whom just didn't feel right - at all) and Miranda (who was way too snobish for my tastes). So none of the options were particulary attractive for me.

I also didn't have a love intrest in ME1 because i was too slow... sue me.

And dude... it's turian. Stop playing WoW. Like, now.

Because I am just an absolute Xenophile, I wanted Garrus. You can call the option giving fangirla a bone all you'd like, but you know what, it was a delicious bone. The dialog was so adorable and hilarious, his awkwardness is what made him endearing to me.
Garrus and Wrex were my favorite characters, so I already had an attachment to Garrus before hand. I also loove his voice ohman it is a lovely voice <3 that and Turians are just cool... they also have kitty faces...

Oh, and I turned down Liara in Mass Effect 1, Ladyshep saved herself for Garrus.
