Fallout 1 - It was okay. I liked the way that your character statistics affected a fair few things about the game, the plot started off fairly good, but after you did the main quest, the one that comes after was a little boring. The world was a bit "meh". Although unlike the next three games, you actually have a reason to want to do the main quest.
Fallout 2 - The premise wasn't very good, but the world and characters were a lot better, as was the dialogue and the equipment. I found it to be far more compelling than the first one, and I loved the mixture between grittiness and silliness.
Fallout 3 - Easily the best starting premise of all of the games. Walking out of the vault for the first time is in my top ten gaming moments. The story after that is fairly weak though, not terrible, but nothing special. Where it really shines is the world itself. It is hands down the most enjoyable one to explore.
Fallout New Vegas - The story overall is the most solid of all of them, although the motivation for it is a little weak. The world isn't particularly exciting, but the characters, factions and towns are excellent. The levelling system is closer to Fallout 2's as well, but a lot more balanced. I also enjoy them bringing back weapon mods.
Overall I'd say New Vegas is probably my favourite, as it is a good blend between Fallout 2's character building and characters, and Fallout 3's game-play.
Personally I want a compelling reason to do the main quest like Fallout 1. Decent characters and character creation like Fallout 2. A great world like Fallout 3 and a proper morally grey story like Fallout New Vegas for the next game.
On a side note: I wish Fallout 3 and New Vegas had the same level of dedication from modders as Skryim and Oblivion. They have nothing in comparison.
