I can really get into Mount and Blade; it is the definitive medieval, role playing game in my opinion.

Fallout 3 and Bioshock are probably top of my list, I can't think of many other games that have drawn me into their worlds like they did.
Also Silent hill 2, very immersive and deeply creepy.

Oblivion for me, definitely. I decided to do the whole Dark Brotherhood-quest line without fast traveling or using the 'fast wait' thing. So if my target required night, I hired a room at the nearest inn.

It was so immersive that for a second I totally forgot I wasn't in fact a Khajit Assassin. Then, I came crashing back to reality when someone outside decided to scream at the top of his/her lungs.

Typically enough, the Half-Life series has always been immersive to me due to the effort into the setting and complete adherence to the First person perspective.

Recently, Cryostasis has really engrossed me due to its excellent sound and lighting design making it almost unbearably terrifying.
