My God there are just so many amazing sound-tracks out there it is hard to choose, but guess if I had to I would pick the Legend of Zelda. Its music has always had a very adventurous, heroic, and upbeat vibe to it that just makes you feel good after you listen to it.

I may be a bit biased here, seeing as I uploaded all the race's theme music to Youtube, but I am going to have to say Star Control 2. Quite a large array of music that gets the themes across for the races in a very simple manner.
Close second would be one of these:
Starcraft Broodwar.
AI War: Fleet Command.
Dungeons of Dredmor.

red dead redemption,it's effective but never gets in the way of the gameplay,and bury me not by william elliot whitmoore always makes me well up a little.
Pretty much any gameboy game, especially Mario and Pokemon, some awesome music.
It still sends a chill down my spine when I hear the random encounter theme from pokemon, one of my mates has it as his ringtone.

Metal Gear Solid series has some amazing music. It incorporates electronic elements along with jazz and classically inspired pieces. Plus "Snake Eater" is a song that my friends and I sing on a regular basis.
Wow theres a lot. But if I have to narrow it down, I would say Chrono Cross is my number one pick. Following that would be the Final Fantasy series, and after that would be Castlevania, again the whole series.
Dragon Age: Origins, the main theme is absolutely great.

I absolutely adore the music that Shoji Meguro comes up with. He manages to get the music just right to fit the mood of the game he's working for.
