Honestly though, I'd guess that it's just because, even non-religiously, Sunday is considered a day to rest, for most people.

Sunday is our worst day for traffic currently/historically (although some of that is of course attributed to lack of new content) - we've tried weekend updates in the past with very little success, if not outright crippling the adoption of said content. If I have to take the site offline, I almost always do it Sunday night to minimize impact on our traffic. OT: Uhh... probably because no one is really around 'cause it's the weekend.
Oh trust me, I get it. This is excessive[footnote]in terms of time spent, anyway. In terms of actual results, it's never enough, because my parents have too much stuff and they don't get the concept of how important organization is when you have that much stuff in a space too small for it. They got mad at me when I deep cleaned my room over the summer because I spent two weeks getting it completely organized.
