Because the Greeks have a very crazy mythology. It is so crazy it has proven to be extremely popular.

Nah, the dude who discovered fire saw a fire caused by lightning, then thought hey, could I make that? He didn't come up with the concept, just extrapolated on what he already saw happening due to random chance.

Hmm... The only book series I know like you described is Percy Jackson.

But If it really is as popular as you say, I guess my answer is "Because mythology is awesome"

Well, everyone knows the myths, and honestly I don't see how using an element from the past is unoriginal, especially since many of these new series are REINVENTING the mythology. For example, the Ravirn series by Kelly McCullough turns the Greek Gods into computer whizzes.
