Xbox 360 and HDMI: Options?

So I am the happy owner of a 360 Pro, one with the Jasper chipset that has the ability to connect to a display via HDMI. I am also the happy roommate of someone who recently bought a 50" 1080p plasma TV. We've got some HDMI outputs on the back just begging to be plugged. So, my question:

What if any options do I have when it comes to hooking up my 360 to my HDMI slot?

The $50 MS-brand cable comes with an HDMI cable, which everyone knows can be bought for cheap elsewhere. But it also comes with a little dongle that looks to replace my component AV cables with an audio output thingy which I'm not sure I need.

Can I just use any old HDMI cable, plug it into the TV and my 360, and enjoy 1080p picture and surround sound? Or do I need the MS branded dongle thing to get my sound to work?

(The intention is to run everything to the TV via HDMI, and then run an optical cable out from the TV to our surround receiver, which has no HDMI inputs but it does have an optical input).

Any advice from you audio-videophiles would be appreciated!

Same thing ebay 24k gold plated hdmi cable 3 dollars including delivery.
Yeah they're all the same really.

The only reason I prefer that one is it has a really good click when you connect it. Which means it can't really fall out. Some of the cheaper ones can loosen themselves.

You will need the cable, only if you are not outputting the stereo from a TV or a seperat box. If you need to output sound direct from the Xbox, you need to get the dongle. However, you can get it from $10 or so on Ebay.

I heard that some TVs downgrade HDMI audio signals from surround to plain old vanilla stereo when using the optical out. This sounds insanely stupid and a complete waste of having the optical out anyway, but does anyone have any experience with this?
