I'm not ashamed to admit I play on easy more then not, especially in story heavy games where I want to immerse myself in the surroundings and not scream in hatred at the screen when I die for the millionth time.
Sometimes I just like mindless fun and unless I'm actually making a specific attempt at challenging myself (like online co-op Halo on legendary with friends) I'll be content to just keep it simple.

i just don't care about challenge. i play for fun and overall experience of a game and story. in every game i play i choose easy mode.
This. The only time I amp up the difficulty is when a trophy requires it. For examples I did a game each on the hardest settings for Bioshock and Fallout 3 (and it was really ****ing hard!) Even in Fallout: New Vegas, I left the difficulty on Easy despite turning on Hardcore mode. I wanted to have a closer to real-life survival experience, but not because I was raped by enemy bullets.

Really depends on the game. For most games I play on normal, but some I'll play on hard, like the CoD games, as I know they are short and I want them to last.

I will also go down to easy if a game is pissing me off. Starcraft 2 has a option to lower the difficulty after you fail a mission. If I fail twice I lower it for that mission, but then put it back up for the next one. I don't got time to be playing the same mission over and over!

Also, sometimes it's like: "I'm fucking Batman! Why should 4 of Joker's henchmen be able to take me out?! Jeezus, I should be able to do better than this!"
That's why I usually play on Normal for the Halo games. If I die often on Heroic or Legendary it hurts the immersion factor for me. Spartans are supposed to be elite, hyper-lethal troopers capable of fighting legions of Covenant troops single-handedly. You don't exactly feel like the unstoppable super-soldier you're supposed to be in-game when you die to the same aimbot Jackal sniper for the twentieth time.

If I find myself breezing through a game while putting next to no effort in, I'll crank up the difficulty a notch or two. Otherwise I'm mostly content to stick with normal. Occasionally I'll go down to easy mode if the game has a particularly steep learning curve.

I play most games on easy or normal, because I play them for the entertainment, not the challenge, unless of course it is games I obviously play for the challenge, like Dwarf Fortress (try playing that on a mac, where there are no fking mods, it's hellish) and Demon's Souls (which obviously have no easy mode.)

I either play normal or easy/casual myself. Started playing on Veteran on my second playthrough of ME2 though, that's a first. It's all about the story and relaxing for me. If I find myself tensing up and/or screaming at the screen then I'm not having fun.

I think it was Tomb Raider 2 for the PS1 some 10, 12 years ago. Once I got used to play on the harder difficulties I never went back to lower settings.

I play through normal first. Then a harder difficulty second. Easy is just that, easy. However I'm yet to complete ME2 on insane and SC2 on brutal.
