Anyone coming to Maryland, Anne's Dari-Creme for the Double Foot Long Chili Dogs, Fries and a Shake. Avoid the raw Clams, but that's just me I think.

AVOID:
"surströmming"

From Wikipedia:
A Japanese study has shown that the smell of a newly opened can of surströmming is the most putrid smell of food in the world
Am I correct in thinking this is the canned rotted herring which cannot be carried on a plane or the smell removed for some 10 years if opened near soft furnishings?
My family ate it once, it was in our backyard and it smelt for around 2 days. And it was fucking disgusting.

Yeah, apparently the only way to open it "safely" is fully immersed in water. Don't think there's anything you can do about the taste though...

To avoid in Canada, poutine..... unless you want 12647 calories in one sitting.
Actually avoid alot of French Canadian cuisine, it's very sugary and very fattening.

Well, living in Florida of the U.S. (southeast regionality, shall we say):

Alligator
-The tail meat, usually breaded and fried. Tastes somewhere between chicken and fish, but has a mild flavor. Not pungent.

Yellowtail snapper
- A delicious sweet-tasting fish. Tastes good pan-seared with a lemon-butter sauce.

Swordfish
-A bit endangered, and thusly a bit expensive. It's a steak fish, but very tasty.

Uhh...that's it, really. Lots of oranges and citrus here. Being so close to the ocean, there's lots of seafood... Then there's typical fast food crap. Also there's a plethora of spanish restaurants, but I'm no afficionado on spanish cuisine.

America

Musts:
BBQ. Other folk do it wrong. I'm looking at you especially, Australia.
Half-Smokes (exclusively a DC metro thing)
Clam Chowder, Lobster Rolls
A proper burger from a place like Ray's Hell Burger
Apple Butter, God of spreads.
Ice Cream from Lone Oaks in New Hampshire
NY Pizza from an old established NY Pizzeria
That casserole Chicagoans like to call "pizza".
Co'n Puddin' (from my sweet, native Virginia)
Sweet Potato Pie
General Tso's Chicken, great masterpiece of Chinese Cuisine not from China

Avoid:
Fast Food Joints

America

Try:
We make some top-notch sandwiches. All things sandwich.
Home-made cheeseburgers, hand-pattied with the from-scratch special sauce... little slice of heaven, right there.
Grilled everything. Americans grill like a boss.
Pie. Pie pie pie pie. In all its incarnations, pie. Apple is a good place to start, I guess, just as long as you eat all the pie. Fun fact: What you call cheesecake is really pie, since it's filling on/in a crust, so that counts too.
Root beer. They're all good, but try to look for the obscure ones in glass bottles. I've made it my personal mission to try as many root beers as possible. A worthy cause, I think.
California wine. European wines are good, but the essence of being a connosieur is appreciating all good wine, and California makes some damn fine wine.
Alcohol in general. Every state has their own beers and liqours, and with enough variety that you can take or leave whatever you want, but you're bound to find something you like.

Avoid:
Fast food burger joints. Some fast food is preferable, honestly. I like Subway and all those kinds of places, and have no problem at all eating there. But McDonald's and all those places just don't sit well with me. Except for their dessert items and drinks, because it's hard to mess up Coke and pie.

I concur on all counts. Especially the recommendation to stay away from Sülzfleisch (and all its no less evil variations, such as Sauerfleisch) is one I cannot second strongly enough.

Now, for my own little list of German foodstuffs.

Try:

Maultaschen (a sort of meat-filled pasta; I recommend them cooked in soup, not pan-roasted)
Pellkartoffeln mit grüner Soße (potatoes with a special sauce based on sour cream, various fresh green herbs and boiled eggs)
Räucherfisch (all kinds of smoked fish; only when you visit the coastal area!; arguably not a German thing, I know)

Avoid:

Handkäs mit Musik (sour milk cheese with pungent aroma, usually served with caraway, chopped onions, oil and vinegar; this stuff is beyond disgusting, avoid at all costs!)

States, specifically Colorado.

What to Try:
--Anything and everything from New Belgium Brewery
--Same for Odell's brewery.
--Hell, pretty much anything from any of the smaller breweries in the state; they're all pretty spectacular. Colorado is a beer drinker's heaven. It has a higher density of breweries than any other state in the country, and probably most any country out there. This place is awesome.
--Bison, Elk, Trout, Rattlesnake, Rocky Mountain Oysters (All can be found at the Buckhorn Exchange; very fun place to go eat. Avoid at all costs if you're vegetarian or vegan for moral reasons, however. You wouldn't have the stomach for it).
--Colorado-fresh Peaches, preferably in a cobbler cooked in a dutch oven.
--Beau Jo's (The original in Idaho Springs if you can; Colorado honey crust pizzas are unique and awesome.)
--Tommyknocker's (Again, the original in Idaho Springs; some of the best root beer ever and damned good food)
--Mountain Food: Go to a skii resort, go skiing or snowboarding on the best mountains on the continent, and while you're up there have some food from any of the restaurants on the mountain. They might not be gourmet or unique, but the experience is worth it, and they're usually extremely good. Especially the fries.
--Camp Food: Go camping and cook your own food. Maybe not uniquely Colorado, but the places you'll camp are uniquely Colorado, and the food you'll cook will be some of the best you've ever tasted. Promise.

If you have time:
--Chipotle (The burrito 'restaurant')
--Smashburger
--Noodles & Company
All are pretty quick and cheap, but they started in Colorado and are decent, not-quite-fast-food eats.
--Colorado-style Mexican food; Ya, it's pretty much like any other Americanized Mexican food out there, but it's still damned good, and we do some things our own way that are worth trying.
--Casa Bonita: For the experience not the food. The desserts are good, but the food is pretty bad. All the same, it's something any visitor to Colorado should experience if you have nothing better to do.
--Hickory House's Ribs. They literally, not even half joking, slide off the bone when you pick them up. Not quite the same as many Midwest/Southern states' BBQ, but excellent in its own right and well worth a try.

What to Avoid:
--Coors: Worth trying once, but be aware that, despite being one of the better American beers, it still tastes like piss-water.
--Rocky Mountain Oysters: Heads up, they aren't oysters, but try them anyway. They're not half bad.
--Casa Bonita: If you eat the food, desserts excluded, be warned that there's about a 50/50 chance you're going to feel like you just ate a Grande meal from Taco Bell. Still, worth the experience.

I can't think of really anything to recommend off the top of my head but I know one thing you should avoid at all cost just looking at will give you a cavity and the smell gives you type 2 diabetes.

Yeah thats a real thing.

Ireland:

Coke Cola and McDonald's.
I know there not only Ireland foods but the rest of the stuff here is not that great. If I did have to pick one food then it would be the burgers.
