Starfox64/Lylat Wars (hard route) in 40 mins. The only game I've deliberately done a speed run of. I'm sure it can be done quicker but that was the best I've done.

I liked the spec-ops, they did a good job of porting that from MW2.

...and just to balance out the universe:
Borderlands was bland as hell & lame.

How do you do a speedrun of star fox? Isn't that a railroad game?

While it is mostly a railroad game there are quite a few things that could potential effect the time of a playthrough. For example each stage may have different routes through the level, going through the quickest one obviously helps. Then there are bosses, clearly there would be a difference of time taken on each one. Most importantly there is the "all range" mode, which is free flying and is not railroad (the fights against Star Wolf for example).

All that said Lylat Wars is not the pinnacle of speed runs in gaming, but it can be done.
