Yes, the all time best book I ever read on the subject was called "Flight of Dragons" by Peter Dickinson, it uses biology and physics to explain all the common trappings of dragons and explains how they could very well have actually existed, how they fly, how they breathe fire, why they kidnap princesses, and even why there's no fossil record, I highly recommend it for any dragon nut. There's also a Rankin Bass animated film by the same name very LOOSELY based upon the book, which is how I first heard about it, it's entertaining enough.

And a fantastic boss fight. Of course, it helps that Dragons Dogma's combat seems to have been built around boss fights.
My vote goes to Grigori as well. Even in terms of appearance he was awe-inspiring but his personality has a presence all on its own. Not to mention that the fight with him is intense if you aren't over-leveled for it. DD is how dragons should be done.

Dragon's Dogma is my favourite fantasy game but I will readily admit that Grigori was the character with which I empathized the most to the point that I even felt bad after killing him.

I've seen several mentions of World Of Warcraft dragons already, but you're all forgetting the most baddass of all the dragons in that game: The Black Dragonflight, particularly Neltharion aka Deathwing and his three children; Nefarian, Onyxia and Wrathion.

Now, Deathwing was the dragon aspect of earth and a pretty cool guy until the Old Gods (WoW's Lovecraft knock-offs, in case you couldn't tell) drove him insane by playing What Does The Fox Say non-stop in his head. When this happens his blood turns to fucking magma and he goes around doing all kinds of evil shit, like making the super-evil Dragon Soul artifact and kicking the crap out of Malygos's brood.

This is all before WoW. During the first two expansions Deathwing is hiding in the elemental plane of earth, because it turns out having fucking lava for blood is not good for you, even if you are a dragon. Thankfully, the batshit crazy Twilight's Hammer cult is on hand to fix him up, making an epic suit of armor for him out of Elementium. Deathwing then burst out of the plane of earth and into Azeroth, knocking the elements out of whack and basically ruining everyone's day. WoW loses tons of subscribers as players flee in terror from Deathwing's wrath (or it may have been because Cataclysm was just a really shit expansion).

Deathwing is only beaten by travelling back in time, stealing his super-evil dragon soul from the past, and charging it with the power of the other dragon aspects, then using on its own creator. Thrall gets to help too because he's Chris Metzen's favourite character. He fires a freaking massive lazor at Deathwing, but his armor deflects it! So everyone gets on a airship and chases him, parachuting onto his back to peel off his armor. Deathwing is so evil, even his blood is evil, attacking you as you destroy the armor. Thrall fires again and this time scores a direct hit, Deathwing crashes into the Maelstrom, a massive fucking whirlpool at the centre of the world. Everyone is patting Thrall on the back when Deathwing comes out of the maelstrom, a molten gribbly mass of awful nasty evil. Everyone gets to work on his limbs so he can be flushed down the maelstrom like some gross spider. Thrall, not wanting to miss an opportunity to steal the spotlight, Thrall tries the dragon soul again, and promptly makes Deathwing fucking explode. Epic dragon, shame about the expansion he was in. More on the Black Dragonflight later!

As an aficionado of dragons myself, I tend to like them more when they aren't just some boss, killing them makes me sad.
That said, here's a few liked:
Paarthurnax (Sidenote: I went through Skyrim constantly using console commands to convert dragons I encountered into my allies)
Spyro, esp. in the original games
Oh, and the player characters in Divinity 2: The Dragon Knight Saga and Divinity: Dragon Commander. Fun times.

You don't have to use console commands anymore. Now, there is a shout for it.

why has no one mentioned Flemeth? sexy in dragon AND human(ish) form, one of the most powerful beings in Thedas, and voiced by Kate Mulgrew to boot. not to mention her fight in Origins is hard as hell if you're not prepared for it.

I like dragons and dragons are not uncommon in games yet I can't think of many that really stood out.

Zhaitan dose look awesome. I hope they re haul that fight properly at some point though. Sitting on cannons and basting him for a few minutes while he just sits there (he doesn't even summon the heads anymore) is hardly an epic fight. It makes more sense for you kill him with cannons I suppose given how massive he is but that didn't have to be the whole fight!

The Shatterer is pretty awesome looking too though also and underwhelming fight. For now anyway, he will probably be overhauled like Teq was.

Bleu from Shining Force. Sure he starts off as a weak baby dragon who just smacks people with his tail, but once he's trained up a bit and gets promoted, he's easily one of, if not the best character in your party. Since he flies, he has awesome mobility. Also, he's no generic fire breathing dragon. NO! He spews fucking lighting bolts and his critical attack allows him to summon a bunch of dragon spirits to attack the enemy.

I'm going to also have to say Zhaitan. Not the dragon himself, but the concept of him being the dragon of undeath like Ishal said. His undead kingdom of Orr causes pretty much all the problems in GW2's story and some of his minions and their sentient devotion to him is unique and interesting.

I never actually completed Arah though, which is probably for the best. I didn't get to be disappointed by meeting Zhaitan himself.
