I really enjoyed fighting the Spider Splicers in Bioshock 2. As much as I loved the first game, I always thought that the Spider splicers weren't creepy enough, so the redesign made them really scary. Same goes for the Brute splicers, since unlike Big Daddies they went on the offensive as soon as they saw you, meaning you had to do all your battle prep ahead of time and with them out of sight.

There's alot of things I like to fight. But...replace fight with KILL. I am the lord of death, destroyer of all things that lift a finger against me...and a fair few that weren't. I murder everything in MDK, I clean up the wasteland in Fallout, and I destroy all humans in...the game of the same name.

It's really hard to say what opponents out of ALL the things out there I like to kill. The demons? The mutants? The monsters? The aliens? Uhhh...let's go with all the weird mascots in Saint's Row 3, okay?

Useless English royals, kittens, old ladies, or useless elderly royals with kittens.

And, I suppose returning to an under-leveled area and more-or-less massacaring everything is sadistically fun, I mean, in a weird way.

The monsters from Monster Hunter are insanely fun to fight and require quite alot of planning. Especially some of the harder ones, they're really fun to fight with a bunch of friends.

And mowing through a zombie crowd in Dead Rising with a lawnmower covered to bowie-knives stuck on with glue is very, very satisfying. Someone should make a game out of that alone.

Nazis!
They make for excellent enemies, especially when they're psychic and can predict your every move
(I'm talkin' Brothers in Arms: Hell's Highway on Authentic difficulty)

Optional superbosses.
It took me like five tries to beat Ozma in ffix but, when i finally did it was one of the most satisfying moments i have ever experienced whilst gaming, also it's hilarious making Hades wet his pants before you fight him, by letting him know you beat Ozma.

Specifically, I loved fighting the Iron Knuckles/Dark Nutts from Wind Waker and, Twilight Princess. The combat system made fighting them really fluid and a lot of fun, especially in Wind Waker where you can cut off their armor. As a side note: I haven't fought a boss in Twilight Princess yet that wasn't fun (including mini-bosses). I haven't beaten Twilight Princess yet though...Stallord was the last big-bad I defeated.
I love the Dark Nutts, it's really the only challenging enemy in the game. The entire combat in the 3D Zeldas, namely the Gamecube and Wii ones, is so involving and feels so powerful.

Overall, my favorite enemies are the slow moving bulletsponges that center around melee combat. Pick them off from the distance, and when they come at you among your "oh shit, oh shit"s, you have to pull out the close range weapons. That's a reason why I really enjoyed Skyrim.

In Street Fighter, since I main Ryu, I love playing against other projectile characters. I love the Rose, Guile, Sagat match-ups, and Ryu mirror matches.

Someone else mentioned it, but I really liked sword fighting bad guys in Wind Waker. It was just the right mix of strategy with out it being time consuming, and the final battle with gannondorf was pretty memorable.

Griffin fights in Dragon`s Dogma. I can beat them easily now but i still love it when they attack. At first you search the sky and sometimes it`s almost to late to jump out of harms way when they come down on you. Clinging on to one, high up in the air is great. Unlike drakes you don`t have to climb to the heart, this makes it more fun to me since the climbing in DD can be a bit off and i suddenly go in the wrong direction.

Oh, and this isn`t fighting it`s more having fun with an enemy (DD again), i like to take the harpie express. You can change the direction of their flying, like in god of war, a fun way to move around.

I like varied enemies, i.e. every fight should consist of a different combo that will change the way I fight.
Which is why I started to hate these cover based shooters, "oh but the enemies so smart" ... but the combat is always wack-a-mole, you always fight them with the exact same sequence and it's boring as fuck.

I loved the boss battles from FFX(especially the seymours), theres nothing like watching your face get blown of with an insta-kill move only to be revived straight away with full overdrive and then send it strainght back at them. Also i loved taking down hunters in halo reach with just a shotgun, energy sword/grav hammer and a few stickies, its so enjoyable nimbly leaping out of the way of a hunters huge sweeping blows only to send a shotgun round straight into the back of his head.

Perhaps the most coolest looking enemy in the game, but these giant assholes do not fuck around. They appear without warning in the middle of huge hordes of enemies, and sometimes in pairs too. And each one is armored, has a ton of health, and has brutal melee attacks.

I also love their high-pitched ululating right when they're about to unleash attacks. When you hear that, you better get your ass out of the way!

But boy oh boy the satisfaction you get when you and your coop buddy beat the snot out of these freaks with powerful melee combos is hard to match.
To be specific, these particular elites.

Elites have always been tough-as-nails across every Halo game, and definitely much more fun to fight than Brutes are. They're quick, intelligent, strong as hell, and aggressive. I love how their skill and effectiveness actually change depending on their rank, with there even being Elite Specialists that come at you in all sorts of unusual ways from using Jetpacks, to being invisible.

But the Elite pictured above are Ultra Elites, I believe. The most nightmarishly difficult Elites to fight.

Sure, the heroic Gold Elites and Hammer Brutes are legendarily dangerous with their insta-kill melee attacks. Ultra Elites pose a massive threat in an entirely different way; they actually fight you as a squad and use teamwork to fucking wreck you.

They appear altogether as a single squad, traverse the map at super fast speeds in unison NEVER splitting up from each other - And then come sprinting at you with all piss and vinegar shooting powerful weapons and throwing roundhouse kicks simultaneously. Oh so many wipes in Firefight thanks to sudden appearances of these Ultra Elites. And may god have mercy on your soul if you run into an squad of them by yourself.

Armed with a goddamned minigun/rocketlauncher arm, can shoot you with 100% accuracy at virtually any range, sprints faster than anyone else in the game can (including you), has extremely powerful melee attacks, can heal himself, and can turn invisible.
To be honest, I've died to this guy way, WAY more times than I've ever killed him. It seems that it's almost always Game Over as soon as he appears, because try as we might - he will kill us ALL eventually.

There is nothing that's fair about him. Even the Tanks from Left 4 Dead are tame in comparison to this asshole. And you know what, I don't even mind getting killed by him anymore. It's almost endearing. Of course, if you do manage to beat him, the slow-mo focus on his dying body is such a rewarding thing to see. Then we can all celebrate by throwing dosh at each other.

Perhaps the most hilarious way I've died to this guy was back when Foundry was just released. The final wave was about to begin, and we decided to hold up in some hallway. We sealed off every other door leading to us except for one, it was the ONLY way that he could get to us. So we took formation side-by-side guns trained down this corridor, waiting for him to appear.

And while we were waiting.... a fucking rocket comes flying out of the darkness in front of us and blows us all to fucking hell. GAME OVER. WE LOSE. Not a single one of us even managed to shoot in his direction ONCE before we all got exploded. It was humiliating, but we all laughed our asses off over this spectacular defeat.
These are what I could think of off the top of my head.

FFX did have some great boss fights. Although speaking of Seymour, I thought his Flux form was one of the most outlandishly grueling fights in the game. I'm willing to accept the possible fact that I was just a moron and never figured out the right strategy, but I swear I had to grind for HOURS on Gagazet just to stand a chance against him. And even then, he still killed a bunch of my party and I barely managed to scrape together a victory.

Oddly enough, after that narrow victory, every single boss fight from Flux onwards was a total cakewalk! What happpened? Almost as if every boss just dropped in difficulty after him, even the fight against his final Omnis form was over in a few turns. The only other boss that was actually a threat to me was the final damned boss of the game. Very weird.

Elites from Halo. Even after all these years I still feel they offer the best in AI and fair challenge.
I dunno, they were goddamn cheaters in Reach.

Got an elite in my sights while im completely hidden? He'll move just as soon as I pull the trigger, It takes like 3 rockets to kill one or two sniper headshots.

I hated those guys. Too much health, not enough weaknesses. The Blob things from Lost in Nightmares were fun though, as well as the Duvalia flytrap-things.

My Killing Floor doesn't work online, but I love fighting Scrakes. Fleshpounds are too tough to properly solo enjoyably, but Scrakes are just tough enough to be challenging without being impossible. The best part is that Scrakes RAEG if you deal them too much damage, so you need to chip away at its health and then one-hit it unless you want to be chainsawed to pieces. My general strategy usually involves the starting 9mm pistol and a crossbow, with a lot of headshots.

Big bosses!! The bigger the better, which can be legitimately defeated.
I hate bosses that keep sending mooks your way then at the end of the wave there'd be QTE or some sort that takes a portion of their HP.
