Seriously, as far as I'm concerned, Final Fantasy summons end with Doomtrain.
Not to mention the fact that he utterly breaks the game. Granted, it
is a pain in the ass farming up all the items you need in order to unlock him (the malboro tentacles in particular) but once you do there's not a single foe in the game that can stand up to you.
On that note, I always liked Hades from FF7, along with Bahamut, Neo Bahamut, and Bahamut Zero from FF7 as well.
Honestly, though, I'm surprised no one has mentioned Knights of the Round. No love for the most over-powered summon in the series? I mean how can you argue with a summon that deals around 129987 (9999*13) damage every time you use it? What's that? You've got 2 people with Mime materia equipped as well? Well that's nice.
Diablos from FF8 was also pretty good. YOU CALL UPON SATAN HIMSELF TO SMITE YOUR FOES!
Get him leveled up and he insta-kills anything with less than 9999 life and deals a guaranteed 9999 damage to anything with over 9999 life without having to do all that boosting crap. Not the greatest summon for later in the game, but still damn useful.
That and he gives you the Encounter-Half and Encounter-None abilities.
Phantom from FF3/6 was always good. Cast him once and you're party is invisible, then it's just a matter of caster berserk on your foes and poof: you're invincible and able to farm cactars and sand worms for 10 and 5 magic points, respectively, a fight without ever having to worry about anything.
