-Assassin's Creed (Almost didn't add this one on account of gratuitous violence. Mindset is violence = guns. <_<)

Actually it's the Aperture Science Portal Device. But my favorite game without guns is by far Morrowind.

I would have to go with Tenchu, pretty much all of them. They are great games which could be even better with a decent sized studio behind them.

Actually that did have a gun. The first mission was to kill a merchant who had a golden gun and if you used the cheat code you could have a gun as a weapon.

I suppose if we're talking about games that don't involve shooting of any kind that would be limited to:

Driving Games
Puzzle Games
Wrestling / Fighting games, though some of these have shooting as well

most adventure / action games have some kind of shooting action in them.
