Ghost in the Shell movies and TV series, it's all top-notch. Season 1 of Ghost in the Shell is one of the best seasons of TV I have ever watched.

The Ghost in the shell stand alone complex series holds a place in my heart and even though I guess you could technically not call it an anime Boondocks (god I love that show).
Hellsing is also pretty damn good.
If anyone says Bible Black though they need a slap.

Death Note is epic...until about half way where all the clever thinking and outsmarting the anime seemed to be based on sort of just...gets a bit lame. In my opinon it does anyway.

Overall would have to be Code Geass Lelouch of the Rebellion.
Although Angel Beats! and Clannad / Clannad After Story have the emotional edge.

I would say my favourite would be Code Geass R1 and R2, although I like a lot of them and there isn't much between them.

Professor Layton... I know it's not technically anime but play the Curious Village and tell me the cutscenes aren't better quality than most anime out there.
But if you want a "real" show, Elfen Lied or Afro Samurai. I have a thing for incredibly violent anime. And Afro Samurai has an incredible cast for a show that a lot of people haven't even heard of.
