How about the scenario set out in Stephen King's The Stand? Just a flu virus which is capable of killing roughly 99% of the worlds population. Simple and rather elegant, humanity defeated by a few pieces of RNA and protein. There's a holy war in there as well, but lets concentrate on the virus thing for the moment.

The scenario from the novel Oryx and Crake.

An unnamed plague unexpectedly kills everyone in a matter of days. No bands of survivors, no slow breakdown of civilisation. Just ashes to ashes; the world is rid of us, before we rid us of the earth.

Obviously there is A LOT MORE to the novel, as it is told in flashbacks by the last man on earth who as a bit of insider knowledge on the plague, but I'm not spoiling anything.

The simple emptiness of the world there appeals to me. It's peaceful, other than a world run over with zombies or surviving bandits.
