I loved the sword fights in Kitano's version of Zatoichi. They actually look like an actual sword fight would, e.g. sword clash once...someone's dead.

I've always been a fan of the Inglorious Basterds bar shootout, largely because of how quick and sudden it is.
And I'm also going to include this one, mostly because I'm still kinda in shock that it even happened in the first place.
