The Fallout series in general. Every single time I've finished all my other gaming plans, I've gone back to whatever Fallout I felt like playing at the time. I'm currently working on New Vegas.
Legend of Zelda, hands down! It was the game that made me want to buy my first game system(N64) and then later explore later games, but the day I learned of skyward sword I preordered it.
Tie Fighter. It reminds me of better days, back when Star Wars was still a respectable franchise and admitting you were a fan was regarded as a mark of pride rather than shame. To paraphrase Obi-Wan Kenobi:
Portal 1&2, Half-Life 2, Dead Space 2, and Call of Duty 4, all of which are games that I can play over and over again, mostly for the stories and characters, and it just doesn't get boring. Also, there's Fallout: New Vegas when I'm in the mood for something more open than the more linear and tightly scripted experiences of the other games I just mentioned.
