Ctrl+F found no results for Yakuza. So go get Yakuza. Specifically Yakuza 3, I think the first 2 might be on PSN but they're Ps2 exclusive otherwise. I still played 3 without playing the others and really enjoyed it.
Basically, imagine what would happen if someone went "Hmm, I really like suits, Japan, and punching people. What would happen if I put them together?" And Yakuza is basically the freakish stillborn yet still somehow alive and charming child. It starts off a little slow and it's a little restricted for an open world game but the combat is really solid, there's loads of stuff to do on the side (probably a bit too much. Like, legit, not like "guuh this has five different sidequests", like this has multiple sidequest chains for each individual minigame)and the story while a bit silly and soap-operaesque at times is fun enough.

Oh and Disgaea.

Up to this point, I feel like I'm just going to repeat other people's suggestions.

I would recommend Valkyria Chronicles on top of everything else however. After that, in no particular order;

Demon/Dark Souls, Infamous Series, any HD editions of PS2 era games, and Vanquish (even though its a TPS, it feels more like a shmup than a Gears of War style cover shooter), and for the downloadables, Guacamelee, Journey, Hotline Miami, Castle Crashers.

Also, it's originally for PS2, but it came out not too long ago on PSN, so I'm including it, GOD HAND!

Can't believe no one has mentioned these little gems:

Yakuza 3
Yakuza 4

Great characters and story, set in a very authentic Japanese setting. Battle system is pretty cool as well.

I find the Atelier Alchemist games to be vastly underrated. Gathering ingredients with varying properties and qualities to make your own items to use during battles was very rewarding for me. The Unfinished Swan from PSN is also fantastic.

Valkyria Chronicles
An absolutely excellent tactical shooter (think Final Fantasy Tactics if you got a gun). A good story keeps you going and a very interesting cast of characters. Another one I'd strongly recommend, especially if you have a tactical RPG itch that needs scratching.
This was my second game for PS3 and I absolutely loved it. I second this recommendation.

He didn't want shooters and he said he likely had multiplatform releases on PC already... You recommend a shooter and two that are shooterish and 5 multiplatform releases that have been released on PC. Consider reading the OP?

OT: Tales of Xillia is a game I love and I am still trying to find the time to play through.
Tales of Graces F was also quite good and I really love it.
The upcoming Tales of Symphonia Chronicles to get the earlier entries of the series.

My favorite exclusives on the PS3 would be:
Demon's Souls
The lesser known prequel to Dark Souls that brought tons of fun and frustration to me.

God of War 3(and all the other GoW games)
If you like action games, and haven't tried GoW, then it's a must.

InFamous 1+2
Don't really remember the first game anymore, since I haven't played it since 2009 or so, but the second one is great. I do recall liking the first one as well, though I believe it was very rough graphically.

The Uncharted series
Adventure, action, platforming. All the things I love rolled into one game. Third one was very meh, but the first two are great. Though since you don't like TPS I'm not sure how fun you'd have.

Ratchet & Clank: A Crack in Time/Tools of Destruction
I loved the Ratchet & Clank series on my PS2 and played them to death. These two are about as good. Had some issues with A Crack in Time, but it was still enjoyable. TPS though.

Metal Gear Solid 4: Guns of the Patriots - Very immersive action/stealth game with a complicated but interesting story. If you haven't played the first 3 games, the story might be a little difficult to understand, and the cutscenes can get a little egregious, but I found it to be one of the best games I've ever played. It is mainly third person, with a tad bit first person though.

Infamous/Infamous 2 - An absolute blast of a platforming series. You'll want to gain superpowers after you play these games. What I found to be the most enjoyable aspect of the games is the ability to choose your karmic alignment, if a little black & white. Once again, it's third person, but it's not primarily a shooter.

Twisted Metal (2012) - Want some multiplayer fun? Get some friends, and enjoy the over the top explosive vehicular combat fun. Not much of a story, but it's there and it can be enjoyable.

Not exclusives here, but still great fun if you own a PS3.

Dragon's Dogma
Dragon's Crown
Kingdoms of Amalur

Dragon's Dogma has probably given me close to 200 hours of play time value on it's own.
I was intrigued by Dragon's Dogma but it fell down on my list because I heard some fairly disappointing things about it. However, I know they released a sort of expanded version that addressed a lot of issues. If you played Dragon's Dogma: Dark Arisen (I think that's what it as called), I heard they lowered the price for the fast travel items. Does the price drop on those items mean that you can just fast travel constantly, by the time you're halfway or so through the game, or do you still have to be selective about when you fast travel? Also, is it fair to say that it's a game you play for the game play and not so much for the story? I heard the story is really weak but I could probably look past that if the game play makes up for it
The haters don't understand - you should get Dragon's Dogma Dark Arisen to start with, rather than getting the original game. I've beaten the original game twice now, and I have to say that it's the best action RPG out there on consoles.
Dark Souls has a cult following, so if you're into it, you're part of that following. I think Dogma has more of a mass appeal, and it's way more accessible (in terms of gameplay). I personally couldn't stop playing it for months.

Puppeteer is one of the best games I've played all year. It has amazing artistic design and a fantastic story. You should be able to pick it up on PSN for a decent price. Otherwise I was a pretty big fan of Star Ocean 4: The Last Hope, and of course Demon's Souls is probably the best exclusive there is.

Either The Last of Us, Uncharted 2 or InFamous 2 for that winning combination of Gameplay and Story that made PS3 exclusives so tasty.

In the way of exclusives for a gaming console, the PS3 offers the best experiences and exclusives. Xbox 360 has Halo,Witcher,Metro 2033, and Fable as the titles I remember for being exclusive to the system. I know that's a short list of exclusives I know about, but over the past few years, I have only payed attention to PlayStation. PS3 gave me: The Uncharted series, Infamous series, The Last of Us, Journey, Metal Gear Solid 4,Ratchet and Clank series, Ico/Shadow of the Colossus HD collection, Flower, Killzone 2 and 3, and numerous games I cherish. I judge a console by its exclusives. In the end, PS3 wins in the way of exclusives. That's my opinion.

So since the PS4 is here and we probably won't be seeing too many more PS3 games, I'm trying to go through all the PS3 games I missed and I would love to get suggestions from this wonderful and sexy community. What are the PS3 games you absolutely loved and thing I should really play?

Side note, I don't like playing third or first person shooters on consoles and if a game isn't a console exclusive, I probably have it on PC. Also, I looooove RPGs and really anything with a good story.

Thank you very much for all and any input
Well in the way of exclusives I loved and cherished on the PS3 were The Last of Us, Journey, Uncharted, and that's all I really cared for. The Last of Us I would pay 100$ for if it was the retail price. It is that good and innovative to gaming.

That's not a safe assumption to make - when the PS3 came out, they were still making PS2 games for about a year, probably longer.

Yeah but that's because a lot of companies didn't know how to develop for the PS3 hardware. Unless I'm thinking of a different console, Sony worked with developers when designing the PS4 so that designing games for it would be easier
