Splinter Cell: Chaos Theory
The Chronicles of Riddick: Assault on Dark Athena (for the updated Butcher Bay)
The Sims 3

Portal, Shadow of the Colossus, Psychonauts, Half-Life 2, One Chance, Minecraft, at least one of the Civilization games (take your pick), Deus Ex, Doom, Super Mario Bros.

There, a nice mix of where gaming's been and where it might go in the future.

1. Tales of Symphonia
2-10. Doesn't matter, as long as you've played ToS.

On a serious note:
1. Tales of Symphonia
2. Legend of Zelda Wind Waker
3. Golden Sun
4. Golden Sun: The Lost Age
5. Golden Sun: Dark Dawn
6. Pokemon Red/Blue/Yellow
7. Metal Gear Solid
8. Heavy Rain
9. Sonic the Hedgehog 2
10. Castlevania: Symphony of the Night

Not necessarily in that order. As long as you play them all.

Doom: Birthplace of the FPS/online gameplay/P

Ocarina of time: Best example of a 2D to 3D series transition

Wizardry: Gave rise to the JRPG

System shock 2: FPS/RPG/Horror/Sci Fi/Co-op/ easily the most progressive game ever made

Resident evil 4: Not the first, but a cornerstone of the popular 3rd person Action/Shooter genre

Counter-strike: Singlehandedly proved the case for the modding scene

Metal gear solid: If you wanna break the fourth wall this is how you do it

Tony Hawk's Pro Skater: The template for all future Xtreme sports (tm) titles

Grand Theft Auto III: Massive title and even bigger mark on the industry

E.T. The Extra Terrestrial: Play this and no game could possibly break your disapointment threshold from now on

I'm going to answer this in a different way than I think others are answering it.

I'm not going to answer: My Favorite 10 games (i.e. the 10 games that I think every gamer should play before they die).
I'm going to answer the original question: I have 10 games to play before I die, which ones am I going to choose?

So, these are all games I haven't played. Because I don't want to spend my last 10 games on games I've already played. I love KotOR, but I'm going to go with a new game rather than an older game for my final days. I'm also going to pick those games that I'm pretty sure I'm going to enjoy...the games that I'll want to play before I die. I'm also going to assume, that because I'm dying, someone is going to lend me a PS3 so I can play Heavy Rain. In no particular order.

1. LA Noir
2. Mass Effect 3
3. TES: Skyrim
4. Alan Wake
5. Heavy Rain
6. Deus Ex: Human Revolution
7. Catherine
8. Red Dead Redemption
9. Still Life 2
10. Hit Man 5

Normally i do these lists least recommended to most, but not this time. Why?
...i only keep the top six consistent... anyway:

#1: Portal
The closest thing to a flawless game in existence, it's a nice three hour puzzle run with a slew of interesting physics puzzles and some of the funniest dark humor you will ever hear in a game. Definitely something to play when you're about to be put into a chemically induced coma you may never wake up from.

#2: Shadow of the Colossus
The most beautiful example of minimalist storytelling and letting the environment and atmosphere speak for the game, Shadow of the Colossus is one of the most definitive examples of games as art. Plus, leaping off of a speeding horse and grabbing onto a low-flying snake to stab it in it's weak spot, all with manual controls instead of QTEs makes you really feel a sense of accomplishment.

#3: Silent Hill 2
The greatest horror experience ever, it has excellent pacing and the monsters are made the more frightening in that their grotesque image bear symbolic significance that you often recognize subconsciously. It focuses on a sense of isolation as nothing around you seems to be totally alive, and the feeling of helplessness added by an invincible boss adds to the experience, while the story of James is such an unbelievably deep tale of despair that at the end of it al you feel so emotionally drained it's like your brain just had a guilty orgasm.

#4: BioShock
Probably one of the best examples of story telling in a game and possibly the ONLY good example of in medias res storytelling in games period, BioShock has entertaining gameplay that is only let down by the hacking mini-game and the fact that you can break the difficulty curve with the proper use of the research camera, plasmids, and gene tonics.

#5: Fallout 3
An FPS/RPG with an insane amount of content and that has a moral choice system that is more than just good, bad, or evil. The fact that it gives a real effort (It doesn't succeed mind) to make the villains come off as not evil just for the sake of being evil but are actually victims trapped in the past of a war that destroyed the world is also a nice touch.

#6: Half-Life 2
Valve's great masterpiece, and the single best pure-FPS with absolutely no competition since unlike Halo or CoD Half-Life has good pacing, characters, and doesn't need a stupid cop-out like "BUT THE MULTIPLAYER," the only reason it's low on this list is because while it is an excellent FPS, it is a little on the short side, and Valve is extremely slow in releasing the episodic extensions to the game.

#7: Grand Theft Auto IV
A fun third person sandbox game that has cover based shooting and an advanced enough A.I to make it all viable while at the same time no regenerating health to make it hopelessly easy, while at the same time cheats to help the worthless bastards who were made soft by years of games with infinite, regenerating health. Some people mind find that the story is a little overwritten for a game that most people will go through casually murdering NPCs when they're bored, but i actually like it where the main character comes off as an anti-hero, and you actually understand how he came to be that way.

#8: God of War
While the gameplay lacked some of the polish of God of War II and III, the original was the best because it had some nice challenges and an interesting Greek tragedy storyline. Though the balance wasn't perfect, the Army of Hades magic broke the curve somewhat.

#9: Prince of Persia: Sands of Time
Insanely fun precision platforming that is tricky due to just how perfect your timing needs to be but not frustrating because of the ability to rewind time. Combat may be subpar but the characters are very interesting.

#10: Hitman: Blood Money
A fun little free-roaming stealth action game where countless options are laid before you to get the job done. It's far from perfect, the A.I and environments needed a lot of polish, but more linear stealth games where killing enemies is often your only option aren't that interesting. It's more fun to feel like you're a really smart guy when you are hiding in plain sight and kill someone with what looks like a tragic accident.

You have to have all of the Metal Gear Solid games if you are going to include 3, otherwise the player is going to get lost in the story.
Ummm... how? You'll miss a few references, but Metal Gear Solid 3 stand really well on its own.

half those games aren't out yet
They aren't, but with the exception of Hit Man 5, they should all be out by the end of the year. And I apparently have got a time before I drop dead in this hypothetical. So, if picking a games that aren't out yet let's me live a bit longer--that's even better. I figure, I start with the games that are already out, and by the time I get done with them the other will be out. If the powers that be say they have to have release dates of this year, then I drop out Hit Man 5 and put in Fable 3, which I haven't played yet.
