Persona 4 -- Japanese RPG at it's finest
Final Fantasy XII -- Most recent Final Fantasy that rocked
Mass Effect -- 3rd person shooter / rpg
Dead Space -- Horror
Bayonetta -- Shoot 'em up crazy-style

Why no Nintendo games? If anyone was coming to ME for suggestions of a launching point, then Mario and Link wouldn't be on their radar anyway. =D

Portal 1 and 2 (I think everyone summed up why)
Minecraft (on peaceful) It's friendly, but is still unforgiving, perfect to get somone to play more serious games later on.
Bejeweled (laugh all you want, it's a very addicting game, and is great for newbies)
World of goo (self explanitory)
Civilization 5

Gotta have anything from the Grand Theft Auto series. I think it's a must. Just give them the controller and let them do whatever they want without doing any of the missions. With a game like Grand Theft Auto you don't have to worry about what sort of theme/genre they might prefer because it's based on the real world, which they'll be familiar with.

The BlazBlue one.
I think the only characters who provide different playstyles that aren't just Rushdown are Rachel, Lambda (Half of whom's moveset is perfect for rushdown), and Tager.

Me and my friend recently agreed that Blue Dragon was a great game to introduce a young person to gaming, by young I mean, say a 10 or 12 year old. So how about Lost Odyssey for adults?

Other than that, Uncharted? Assassin's Creed? Portal? There aren't that many pick up and play games nowadays

It'd have to be simple, you don't want a daunting game that'll scare them away. Basically, give them Pac-man before you give them Dwarf Fortress.

Hmm, let's see, how about:

1) Minecraft, creative provides a good way to learn FPS controls, and survival ups the stakes, though I suppose I would have to hover over their shoulder and explain what to do, since there's no tutorial
2) Plants vs Zombies, hilarious introduction to strategy and PopCap
3)Amnesia: The Dark Descent, more FPS stuff I guess, but a great way to show off videogames as more than just toys
4) Crayon Physics Deluxe, mainly because I've been playing it recently and adore it
5) Trine, good intro to platforming I reckon'

I'd pick games that would run on their own basic, non-gaming PCs. Free demos are also a good idea.

Plants vs Zombies. Fun, simple mechanics. Soft learning curve, but gets somewhat challenging later.

Serious Sam SE (old non-HD version). An entertaining old skool shooter for learning mouse aiming. Hoping the demo will run on their integrated gfx.

Tropico 1. Most interesting introduction to building games. Very scaleable difficulty.

Toki Tori. Simple puzzle platformer that doens't require reflexes, but is still challenging.

Divine Divinity. Gentle introduction to RPG mechanics. Diablo gameplay + dialogue options.

Five and only five? It depends on if they're going to be a console or PC gamer.

On consoles, I'd suggest Halo CE, Modern Warfare, Assassin's Creed, Portal 2, and Dead Rising.

On PC, I'd suggest Modern Warfare, Skyrim, Half-Life 2, Left 4 Dead, and Final Fantasy VI. Sure the last one is a SNES game, but you can always find an emulator.

Also the lego series of games are a great way to start someone, remember that platforming games create gaming skills that most people take for granted... but are required in nearly every game since. Things such as timing of jumps, judgement and even simple things like angling the control stick correctly.
If a person is truly new to gaming they will have no concept of these things, and throwing them into a complex title may just put them off completely. (though of course it all depends on the person).

After those you can branch out into others such as fighting games and fps.
good call I agree first person shooters can be to complex especially with the dual analog sticks.

the funny thing is i tried to introduce my girlfriend to video games through portal, but she plain couldnt work out the controls and didn't have the patience. I thought coop would be better for her and was overjoyed when i heard portal 2 had coop. But her response was "oh no, not portal!"

I died slightly inside.
