But it's hard to distinguish whether these are good actors or just people I fancy.

Haven't you forgotten Christopher Lee? Everything I have seen or heard him in has been good, even if the movie or game wasn't.

Yeah Lee is so awesome, even his voice overs in games are great to listen to. He has one of those distinctive voices you cant mistake.

I also like Harrison Ford (was pretty much in every great movie I saw growing up: Star Wars trilogy, Indy trilogy, Blade Runner, Fugitive, etc.)

Patrick Stewart is such as classic actor, he can make any role he gets awesome.

I'd add to the list: Jackie Chan (he can barely deliver a line of dialog in English but he's the king of funny martial arts movies), Christopher Lambert (most awesome swordsman in movies), Rowan Atkinson (how could a site with so many Brits on it miss him? He's so funny and inventive in his shows)
