I don't know if I can pick one. I can certainly pick 3, though: Clannad After Story, Princess Tutu and Tengen Toppa Gurren Lagann.

If I had to pick one of those, I'd pick Princess Tutu; just because of the reaction I get when tell people how awesome it is.

Does anyone know where i can get hold of a good collection of Neon Genesis Evangelion in the UK.
Amazon.co.uk

Alternatively you might get lucky in your local HMV, as the ones near me generally have an anime section. If you've got a CEX nearby, you could get a few DVDs second hand if they have any (or again, try online).

Elfen Lied. Great pacing, good story, and nice action. However, I'm sad they cut it out when they were halfway through the story in the manga. But no matter how much you hate it, you have to admit it had wonderful character developement.

The Nior, blues-infused tones of Cowboy Bebop have yet to be matched. A believable Si-Fi opera with a slight distopian feel.

Why has nobody mentioned Ah! My Goddess! yet? (The new series, not the old one.)

It's the best romantic anime I've seen, and it's pretty funny in places, too. The balance between romance, conflict, and comedy is perfect.

Only one so far has appealed to me, as most recommendations from friends do not sit well with me.
It was Cowboy Bebop, since it is portrayed well enough as just a more advanced version of us, and no ridiculous magic / spirits / demons / crazy things. Though if anyone wishes to recommend me more of that sort of thing, it would be much appreciated.
You could try Baccano! There's things like immortals and such due to old world alchemy but it's used to look into the human condition regarding the whole mortality vs immortality thing, not for crazy swordfights where no one can die. :p

It takes place in 1930s Chicago and has gangsters, gunfights and a train robbery all rolled into one. The English dub cast really does it justice. Give it a shot. Here's more info and a video.

OT: it's between Gurren Lagann and Clannad After Story, both of which have been mentioned.
