Looking for some good shows, personally I'd recommend these three, lets use AMV's as a quick intro and see if they catch your interest. Some Spoilers ahead :

Black Lagoon- violence and awesome, oh so much awesome.

Serial experiment lain - I guarantee you will not forget watching this one.

Last exile - This is a personal favourite of mine, it's epically good.

Ninja Scroll (there a short tv series that's okay), Sword of the Stranger, Wolf's Rain, Mezzo DSA is silly action fun.

YES. Mushishi is absolutely fantastic and the new season is pretty damn good as well. Episodes 2 and 3 of S2 are probably some of my favorites in the series.

I am not one to judge, but with Fairy Tail, Naruto and Bleach you got the shittiest *ahem* - most overhyped - collection of anime you could possible muster. The only thing missing is Dragon Ball Z.

Doh, I did just judge, didn't I. Anyhow, if you are looking for that kind of anime, you could also try Soul Eater. Though the style is something you love or hate. Same goes for Gurren Lagann and Kill la Kill.

All 3 anime are stylish with insane and over the top battles and fight scenes.

I don't watch too mmuch anime since it feels like nothing will outclass my favorite most anime, Steins;Gate. Time travel, down to earth, slightly mysterious and cutesy at times. It's on the pinnale of my anime list. The rest have been rather far from it, I think the next highest one would be Mirri Nikki(Future Diary). Bunch of students with a series of different types of diaries that predict the future in different ways with the best healthiest relationship I've ever seen in anime.

I can back up this recommendation 100%, since you like Shounen OP, Hunter X Hunter is a must watch. The current arc that it's on is probably the best thing in anime that I've seen in awhile, is it my favourite anime, my username and avatar should answer that. Plus with the manga coming back in June, it would be a good time to catch up with it so that you'll be up to date

Cowboy Bebop
There's not much that I can say that someone else wouldn't. It's a space western, it's popular, it's popular for the right reasons, it's good, the english dubs are good. It's got action, our protags are bounty hunters down on their luck, their ship barely works half the time, the other half the time they don't have any food, and the space ships and space life are generally not too far out there and crazy. It's a show I've always liked since first watching it and continue to enjoy over the years
Outlaw Star
Space western with a bit more action than Cowboy Bebop, Tech is more advanced and can result in some crazy stuff here and there, a crew of rag tags jumping into space and looking for a sacred treasure. Where I might consider Cowboy Bebop more of a Firefly type show I consider Outlaw Star more of a Star Wars type, a little loose with the rules, but only to try to make the show that much more enjoyable
Mobile Suit Gundam 8th MS Team
The Gundam anime to tell people to watch who don't like Gundam anime, or what they think Gundam is based on Gundam Wing and later Gundam series, things outside the Universal Century. The story is a bit more focused than other Gundams it's a shorter series, the combat is a little more rough on the characters for standard engagements, the Mobile Suits our heroes use are not unstoppable killing machines slicing down tens of enemy suits at a time, instead a single enemy Zaku can pose a decent threat. It's a Gundam more about the team and team strategies, more about the combat, and the times in between combat. It's a good show, if you like mechs with some weight to them
Baccano
The first episode (maybe even the first two or three) make it a little confusing at first, and tough to get into, but if you stick with it things start clearing up, falling into place, and you understand easily enough what's going on after those first few episodes. Fun show, set more in a alcohol prohibition time period and has enough action without having too much action, one of the more fun recent animes for me
Baka and Test
School in which classes are determined by grades, where the best class gets the most luxuries, or the worst class get's broken splintered crap. With one little special rule, students can enter a sort of Hologram battle with the class one grade above their rank, where their battle score is based on their most recent test results, and the winners get the losers' teaching equipment and comforts. So the worst class in the school decides they are going to go all the way and out test and battle all classes above them. It's silly, it's loose with the rules, I like it, it's fun.
Angel Beats
Angel Beats is a show that I think has a tone change about half way through, and it can be a fair bit of a shock, though I'm not sure I've heard many talk about that bit of it. So, the idea is there's these students, and as far as they can tell they're in some sort of after life or something, where they're still in school. The student body president (or what have you) is their enemy, she'll strike them down when their out of line, killing them - though, in this after life of theirs dieing means nothing, you just wake up a while later and go about your way. It's fairly goofy early on, and NOTE the character of TK, if you watch the english dubs, in the japanese original voices where everyone speaks japanese TK speaks English, where as in the english dub they all just speak english including TK, and so the reason they have a hard time understanding him really just - I don't know, it's a weird little thing to me. Anyways the shift happens about half way through or so, where to keep things safe, emotions happen. And it's a bit less happy go lucky, it's still happy go lucky here and there, but not as much as earlier. As for myself I much prefer the later half of it than the earlier half.
Bubble Gum Crisis Tokyo 2040
Tokyo has a massive earthquake, the city is damn near leveled, but luckily just in time labor ready robots are made and set to work building city back up. Years have based and the robots are now a regular part of Tokyo life, they're street cleaners, secretaries, receptionists, fast food employees, waitresses, ect, however sometimes they short circuit their wires get crossed and they go on a murder spree. As the police cannot handle the threat a special police force is created, however they don't have the best results either, and so a group of Vigilantes patrol the streets in power armor fighting the murder spree robots as they go bad. There's a small arc late into the show that's basically a zombie piece but with robots, really fun.
Iria the Animation
Iria is one of those animes that I don't really hear about, I think it mostly never really caught on. I rather enjoy it though, it's got action, a creepy factor, scientific experiment nonsense, a seemingly unstoppable alien monstrosity, a government coverup, and a badass girl with a gun. It's about Iria, a bounty hunter in training, in the space age, in a space thriller.
K-On!
Slice of life anime about a group of girls getting together to make a music club at school, a light music club where the point is to play some music and have fun, and drink tea and eat cake, sometimes the whole music part gets in the way of the cake and tea. It's a light, happy, bubbly show. If you want something serious you'll hate it, if you want something with cute girls being cute girls you should enjoy it
Cromartie Highschool
Protag goes to a new school, a school for delinquents, doesn't quite fit in, but maybe he'll find his way. Also it's crazy, off the wall, not super insane, just fellow classmates include a Robot, a Gorilla, and a guy who looks to be in his 30s or older. And it's a comedy, through and through, fun, out there, "He ate my pencil!"
Higurashi No Naku Koro Ni
Slice of life anime, new kid arrives to a small town, befriends a group of cute girls, and how they grow over time, get to know each other, grow their bonds tighter, and OH GOD why are they killing each other?! Horror anime, mixed with Slice of life friend ships, and murder, and torture, and more murder, and dark pasts, and hidden secrets, and zombie tag, and games, and caring for one another, and growing together as friends and loved ones, and murdering all your class mates. It's scary when it wants to be, it's funny and cute when it want's to be, it knows what it is, it shifts from one to the other rather well. It's a really good anime.
Another
This one seems to get equal amounts of love and hate, how I would describe it, if you've seen the movie (or the sequels) the Final Destination, it's like that, but anime. Horror anime in which a ghost's mere existence in class causes death to come for the rest of the class. And people can die in any number of ways, and death is coming, looming, and I really enjoyed it, then again I really enjoyed the first Final Destination movie, I even liked the second Final Destination.

Sports Anime - because I like sports anime, the drama, the friendships, the emotions of winning and losing, and the insane they put into these sports shows.
Ace of the Diamond
Ongoing Baseball anime, where a kid from a small town who's team mates love him but they suck at baseball, somehow catches the eye of a recruiter for a highschool with a strong baseball team, and is brought in, where he has to contend with strong pitchers in order to get his chance on the mound. The story focuses heavily on the Pitcher and Catcher dynamic and what it means to be the ace of the team, and how do these characters deal with teammates who may take their spot and replace them, when and how well can they focus on being a team, even though they already work very well together, some still have their hang ups
Big Windup
Baseball anime, one season long, ends without any major resolution, still enjoyable to watch. Pitcher who is shy, emotionally fragile, and his past teammates hated him, feeling he was only on the mound because his family owned the school. He is now moving on to highschool where he winds up in a small baseball team, and he is their pitcher, and he now has a team backing him up, cheering him on, and playing with him. A fair amount of focus on the pitcher and catcher relationship.
Cross Game
Last baseball anime on this list. The story is more about emotions, and stories, characters' pasts, and how they deal with these events. Baseball happens, and it's fun, it brings some of them closer to things they've lost. It's important to them, they train hard, they play to win, and to hold onto to past memories. 50 episode series, ends on a cliff hanger, but part of the point of the story isn't what happens after episode 50 it's about everything before.
Free
I believe there are really mixed reviews for this anime, mostly because it has a lot of fanservice throughout though this time it's guys, guys in speedos, guys in tiny shorts, without shirts, sleek toned glistening wet male bodies, and emotions, and friendships, and their need to swim, to be in the water after having so long been not. It's a sports anime with a heavy focus on their relationships with each other and their pasts, and it has a ton of half naked guys. Really fun show with some heart.
Kuroko's Basketball
Basketball anime about a super dream team of middle school students, who each go to their own schools and form into their own teams to compete on the court. Story follows the mysterious, rarely heard of Sixth team member, and his insanely silly ability to be forgotten about and not noticed. He comes to his own school as the other five super stars each go to their own, and he wants to beat them, his way - playing as a team, instead of super individuals working on their own merits, worrying about their scores, he wants to prove to them that teamwork can trump all, and that over the years they've lost something that used to make them special. Emotions, team building, team work, crazy insane moves on the court. A new season is said to be on the horizon

I really well made movie about a boy and a girl running from a shadowy organization hunting her down, filled with robots.
Venus Wars
Venus is going through some stuff, and a group of motorcycle racers plan to fight back. I don't know how else to really describe this one. It's a rag tag group against a small military army.
Armitage 3 Polymatrix
Police officer in a new post meets up with his new young girl partner as the uncover a dead body and down the rabbit hole they go, into a world of robots that are deemed okay, and robots that are too human like for the masses to be able to feel safe around, so they attack out against these robotic 3rd types, and more bodies turn up. There's some out there anime fighting that happens in it, but over all it's not that out there, sort of a blade runner meets anime I guess? There's an OVA and a Movie version, there's also a sequel call Dual Matrix

and crap that turned out longer than I wanted.

I was wondering if I'd be the first person to mention this one. I loved Steins;Gate, and my opinion on it completely flipped too. I originally hated Okabe, but as the show went on the way he acts starts making sense.

There's a massive gap between the anime that I think are great and those that I just think are good. Madoka Magica and Steins;Gate are probably the only two I've seen that I would consider great. There's some that could have come closer if they didn't drop the ball part way through. I was a massive fan of FMA, but I hated how the ending was so Shonen-y and contrived (Brotherhood, not the first anime, I never liked the first anime to begin with).

Attack on Titan was looking good to start with, despite how boring and one note the main character is (KILL ALL TITANS). I really liked the Battle of Trost arc and, despite its length, it never felt to me like it dragged on because the plot and character progression kept moving forwards. However, in the rest of the season things just really started dragging out. At the end of it I felt like they were at pretty much the same place as they were at the end of the Battle of Trost. Maybe the next season will redeem it, but at the moment I'm disappointed because it had a really good thing going there.

Well, I really like Steins;Gate. If you're into time travel and quirky humour with some dark bits here or there it's pretty good.

Other than that, A Certain Magical Index is one of my current favourites. It's about a clash between religious orders, magic users, and people with scientifically created abilities called espers. The main character (who's classified as a level 0 esper, meaning no ability) can nullify both using a power in his right hand called Imagine Breaker. There's also a companion series, A Certain Scientific Railgun.

I honestly can't decide on my favourites (mainly because I haven't watched much anime) but I would heartily recommend:

Shingeki no Kyoujin (Attack on Titan) - While I didn't enjoy it all that much, it is a very well made show with great animation in most places (still frames are more common than I'd like) and a pretty cool world. Also Hiroyuki Sawano's score is god damn fantastic to listen to. The man's a genius.

That being said, it's got some serious flaws that really killed my enjoyment, first, and most egregious of which being the pacing, which starts off a break neck pace for the first few episodes but slams on the brakes for the middle two arcs only to pick up in the last five episodes. It also suffers from the usual shonen problems such as an excess of melodrama, and episode padding in places. Deaths are also far to common place and for the most part the characters aren't really distinct enough for their deaths to hold any kind of weight. Add to that, the ending to the first season sucked ass. (Wait why am I recommending this?) But if you have a tolerance (as a good chunk of the internet seems to) for all that than you'll enjoy the show immensely.

Kill la Kill - It's an absolute blast to watch. The characters are great, not necessarily nuanced, but very likeable and fun to watch. The animation is great, especially the fight scenes, which are pretty balls-to-the-wall. The music is by Hiroyuki Sawano so expect eargasms to occur. It's got flaws, like the middle arc being way to long for what it was and the finale feeling like it could have used an episode or two more to get properly fleshed out, but even with those flaws, it's a very watchable show.

Tengen Toppa Gurren Lagann - This show. This fucking show. Very few shows I know of have started at its level of crazy and only gone further with it. Naturally, the show ends with one helluva bang (which I will NOT spoil and you would do well not to). Like with Kill la Kill, the characters are a blast to watch, albeit with slightly more nuance to them. Basically this show is the phrase 'Fuck yeah' given form.

Ghost in the Shell: Stand Alone Complex - Ghost in the Shell was a very smart film with a well realised and fleshed out world, interesting things to say on transhumanism and the human condition and some kickass action scenes to boot. That being said, it had some serious pacing issues due to its 80 minute runtime and need for both fast and slow moments. This left the plot feeling as though it skipped out some bit, leaving the final product significantly weaker. The show, on the other hand, doesn't suffer from such problems. Each of the two twenty-six episode series feels just as long as they need to be, a very rare quality for such shows. This is due to the very clever way they went about developing the main plots of each, with the series consisting largely of standalone stories with some link to the overarching story. This keeps the show overall as a slow burn, as a noir should have, while allowing each episode to largely do it's own thing, ranging from quiet character focussed episodes to brisk action to the odd quirky episode. It's a great show that you should not pass up.

Cowboy Bebop - Why haven't you watched Cowboy Bebop? Go watch it. There is no excuse. There's something for everyone. I would go on, but I'm really god damn tired.

You want to feel good? Watch some more Shonen. You want something that will leave a lasting affect? My friend, watch BERSERK.

There are other classics, of course. Princess Mononoke and Neon Genesis certainly left their mark. Nothing quite lives up to the Berserk Manga though.

I agree with this statement but DBZ was my childhood so I must defend it to my last breath.

A brilliant deconstruction of magical girl anime, but more than that it's a very well-written and well-executed series.

"Paprika"
Think like an anime version of "Inception." Nolan admitted that this movie was a big influence on "Inception."

It probably depends on how much you like to analyze a series or movie, but Neon Genesis Evangeleon would fit that bill. I watched it for the first time last summer after putting it off given the series' "reputation" but I'm glad I watched it. Holy balls, the series isn't exactly subtle with its message but it completely rips apart all the common anime tropes that we still seen even 20 years after NGE originally aired (which is why I don't get when people call it dated). There's so much content to think about and so many tropes and concepts that I never questioned the logic of.

Oh, and don't let the "super emo so fucked up" reputation scare you away. Its completely absent in the main series. The movie End of Evangeleon is where shit gets super real. But if you like the series, you'll know if you want to see the movie

And if none of that interests you, fight scenes are still great
