Since alot of the suggestions are slightly older classics, and me only having gotten into watching anime property in the past year or so, I'm trying to recommend more recent entries:

I personally rank all of the above at least 7+/10, out of about 20-30 anime series that I've watched. Of course they may not be the type that you like, but I hope you will give some of them a try regardless.

Things I have heard good things about but have not yet seen:

I have the Manga books for Escaflowne lol, never watched the anime i brought the dvds for a mates birthday never watched it though as it is different to the manga according to the "front" of the book
Yes, the manga is different from the TV series, and both are different from the movie. I've only gotten to read the first couple of volumes of the manga, but I absolutely love the TV series, and the movie ranks pretty darn high for me as well.

My favourites are a little all over the place in terms of genre and complexity. There's some hardcore anime fans that say you can't like the popular series for some reason, but of course they're popular for a reason.

- 07-Ghost - a really obscure one that I found through the manga series. A huge budget was poured into this series; incredible art, music and animation. It must not have reached the return they hoped for, because it ends before the real adventure kicks in. Hopefully they intend to continue into a second season soon, but it's a decent watch on it's own. Heavy military and religious themes.

- Death Note - a very popular series based on detective work, cat and mouse chases and philosophy.

- Ouran High School Host Club - a self-aware harem series that often breaks the fourth wall. It's kind of a parody of reverse harem animes that fan-girls pour over. Although I would steer clear if you really cannot stand romance shows.

- Black Butler - I recommend the English Dub for this one (such blasphemy!), because after all it is set in England. Another supernatural detective series.

- The Melancholy of Haruhi Suzumiya - another popular series that might have been a cult classic in its time. It defies any real genre or explanation. Another recommendation in English Dub.

- Eden of the East - people compare this one to Death Note, but it's probably a bit more complex than that (and more light-hearted and modern). It's a hard one to describe, but definitely one you should look into.

- Code Geass: Lelouch of the Rebellion - this one disguises itself as a cliche people-fighting-in-mechs anime but turns out to be a lot more complex and entertaining than you'd realise. Very big parallels to Death Note.

I have a few others that are not my absolute favourites but are certainly worth looking into:
- Fruits Basket
- Full Metal Panic
- Katekyo Hitman Reborn! (This takes a long time to get going, but once it does (around episode 30) it's awesome. Not for everyone though).
- The Daughter of Twenty Faces
- Mushishi
- Naruto Shippuden (A lot of people think this one is too shallow to like, but it's more of a light-thinking-but-always-entertaining show)
- Neon Genesis Evangelion
-Sword Art Online (at least only the first season. The second gets really creepily sexist).

to the OP: You're watching Fairy Tail, Bleach, and Naruto, but not One Piece? You're doing shonen wrong. It's been in the top 3 shonen for the past decade, and it's got another decade left in it. The fact that the author actually knows where he's going with the story makes a huge difference. I watched all of the pre-Shippuden Naruto stuff to humor my friend, and honestly, none of that had the emotional impact of the Rainbow Mist arc in One Piece. And that was a filler arc for craps sake!
As far as recommendations go, I just got done enjoying Gundam Build Fighters. It's got all of the cool combat Gundam is known for, with none of that "war is hell" junk they bog the main series down with.

Well my FAVORITE Anime is Panty and Stocking with Garterbelt, but I imagine you're looking for something a little more anime-y and perhaps a tad less raunchy (PSG is still the greatest thing ever though, just sayin')

With that in mind I'd recommend Kill la Kill, Ghost in the Shell (the movie and the series, I wasn't that down on GitS 98 myself), Puella Magi Madoka Magica, Black Butler, Death Note, etc.
I recommend you TRY Attack on Titan just to see if you like it or not, I myself don't care for it but I'm pretty much wrong in that regard.
I personally absolutely loved Watamote, but that's a show with a very very VERY specific audience, and if you don't fit into that audience (EG: didn't have a high-school experience like Tomoko's) you'll probobly find it mean spirited and rather disturbing.
I really liked the manga for X, Vampire Night, Tsubasa, Zombie Loan, and Sakura Taisen but I've never watched any of the respective anime so I can't comment.
Oh and while I acknowledge that it's a very western-centric show, I absolutely love Michiko and Hatchin, so I highly recommend giving that a watch.

That's everything that I can think of off the top of my head.

I haven't seen much anime, but I have seen Code Geass and would recommend that. Ostentatiously dramatic and epic (with an extravagant operatic style), entertaining and compelling. (with lots of twists and turns)

It's mostly a character drama, and the mech battles are perhaps the least interesting part of the show; which I don't mean as an indictment.

It's enjoyable at a serious level, but also has plenty of narm charm value as the creators clearly had some fun with it.

I also forgot to mention the movie "Sword of a stranger". The whole movie was a build up for the final fight. Just too beautiful for words.

Gigantor - This is a classic that I believe ran back during the 60s. It ran in syndication on Adult Swim. I watched whenever I caught it. Just watch.

Some of my recommendations are classics, but I really love classic shows from the 70s and 80s. Do some digging and don't pass up a chance to watch the classics. I think the 70s and 80s were an excellent time for Japanese anime.
