God Hand.
It's hard, fair, and loads of fun! It takes some getting used to, but is a truely great game.

EDIT: Oh yes, can't believe I forgot Ratchet and Clank 2; the others are also great, but this is a must have.

Killer7, Beyond good and evil, Okami, Rogue Galaxy, Wild arms 3, Project Zero, Valkyrie Profile 2: tales of Silmeria, Giants: Citizen Kabuto, Ico, Shadows of the collossus, Metal Gear solid 2: Sons of liberty, Metal Gear solid 3: Snake Eater, Shin Megami Tensei (pretty much any of them, though my personal Favourite is the Digital Devil Saga), Killzone (no, i'm only joking), Tokobots plus is pretty damn awesome, and a little known game called Ghost Hunter, i found to be alot of fun. Kingdom hearts I and II, Final fantasy X, Odin Sphere, Zone of the enders one and two, Disgaea, Monster Hunter (an acquired taste, and an EXTREMELY hard game, it's massive in Japan, but not so well recieved here. Fahrenheit AKA the Indigo Prochecy was an immensely good game, though there were some slowdown issues on ps2, so it might be better to get it on PC? Resident Evil 4 is an absolutely breathtaking game, and if you hated the controls of the previous 3, you will love it.
And last, but certainly not least, Dragon Quest VIII: Journet of the Cursed King is very very awesome. The Onimusha series is quite well-done too, and As for Psychonaughts, i myself am yet to play the game, but I hear good things.

I would recommend Shadow of the Colossus or God of War. I'm not good with acronyms...

Beyond Good & Evil, Tekken 4, Max Payne, and Siren are all in my game list. They're pretty fun.

Killzone wasn't great, and while the graphics and story did alot to keep me playing and finishing the game, the slowdown and sensitivity for the controls were simply abhorrent.
I liked the game though, even though I'll NEVER play it ever again.
I feel bad for not mentioning Red Faction one and two though, and Black... Easily the best FPS on ps2 ever.

same here, but be careful, atlus seams to have an obsession with deamons, so if a pentacon appears on your ps2 and you start seeing monsters with HP bars over there heads. remember..... i so called it!!!

Play the original R&C and possibly Prince of Persia

It's a love or hate kind of game, but I loved Kingdom Hearts.
Also, God of War, of course. Metal Gear Solid 3: Subsistence I liked very, very much.
Okami, Psychonauts. Resident Evil 4, Tekken 5.

The main character is BAD-ASS, the fighting system is good old turn-based. Its challenging, amazing dark and gritty story. Great side-quests.
You forgot the awesome humour but I don't understand why you cannot recommend the second? But then you mentioned FF7 >_> Can't forgive that.

Edit: OT:

-Zone of the Enders (at least the second game, the firt wasn't all that great)
-Shadow of Rome - very varied, but hard as hell
-Any Silent Hill game - they're all worth it (edit: get origins only if you played and enjoyed every other game, too - it's the weakest in terms of atmosphere and suspense)
-Metal Gear
-Project Zero (That's Fatal Frame if you're American) - the games are, together with Condemned, the only games that get pretty damn close to Silent Hill in terms of atmosphere and scariness
-Suikoden 3 is supposed to be a pretty damn good RPG but it never got released in Europe so I cannot tell - :( Damn you, Konami
-Killer7 - if you've got a Gamecube, get it for that platform, though, it's a bit better to handle with the GC controller, but warning, it's extremely twisted and the gameplay is not much more than a railshooter, but it's great
-Spartan: Total Warrior - great mass-murdering action

There's about a gazillion other games to name, but I guess these are my favourites

Also if you're into it the Need for speed series up to underground 2. MGS series, COD series, I'd also suggest Tekken and DBZ for the lols :D

Believe it or not, but the original Mercenaries was REALLY good. Also, Ratchet and Clank, Jak and Daxter. Kingdom Hearts was good too, but only if you really like stories. The gameplay was decent, but it was button-mashy. The sequel has much better gameplay.

Had Mercenaries for my XBOX, loved the game until a friend came over and decided to rampage through Korea on my game. Then he saved it. Hadn't played it since. Then again, this is the same friend who forced me to watch him playing Disgea, until I lost all interest in that game as well.

i have gotten in the habit of having double saves in most games, to prevent both saving over and crazy rampage saves
