I read this thread, and now I really really really really want some cheese fries...

I might have to resort to going out there, buying the potatoes and the cheese and the various other ingredients used to make cheese fries, and make them myself...no place around here that sells cheese fires :-(

Now are we talking:

1) Velveeta/radiation cheese - then you want Ben's Chili Bowl (DC) cheese fries. My personal favorite.

2) Waffle cut fries with real cheddar - Red Hots in Ann Arbor, MI

3) Queso - Billy's in Austin TX.

Personally I prefer radiation cheese, it melts & has better coverage and allows for more variations as far as spices and hot sauces go.

Real cheese - of any kind - doesn't work for me. Yes it's real cheese and yes real cheese is very good but if the cheese is so good why are you putting it on fries? Real cheese cools very quickly and creates a vaguely greasy clumped blanket over the fries which in turn become soggy. Doesn't sound like fun does it.

Queso is a go to here in Austin. Chips (tortilla) & queso. Fries & queso. Chili con queso. Queso con queso. It's good and there are many variations on a theme. In my experience queso is better if it's on the side and not poured directly on the fries - it doesn't cool and congeal as quickly.

Chili cheese fries are a monster. A basket of chili cheese fries and a pitcher of lager is one of favorite meals or was until I found out I have insanely high blood pressure and has to get on the wagon. If you still are able to eat chili cheese fries then please go do so...for me.

No disrespect to our neighbours to the North but poutines sound very unappealling. Putting cottage cheese on fries makes me uncomfortable. Perhaps I will attempt to eat it one day.

I also have to disagree with you folks who put brown gravy on fries but this aversion is based on a dislike of brown gravy...or gravy in general.

And yes I spend as much time thinking about food as I do thinking about gaming.

As of now, Carolina Ale House [http://maps.google.com/maps?f=q&hl=en&q=3911+Durham+Chapel+Hill+Blvd,+Durham+NC+27713&ie=UTF8&ll=35.970261,-78.955393&spn=0.017366,0.057678&om=1]. Big, seasoned steak fries with multiple cheeses, real bacon, and optional jalapenos if that's your thing. They're even better when you follow them up with the ribs.
Sign. Although Flying Saucer's are pretty good as well.

Fresh with sea salt. Aioli is pretty big in Australia, apparently they put it on everything in New Zealand.

Cheddar fries with bacon bits and garlic sauce at a small fast food restaurant in Bray, Ireland. The thought is enough to make me hungry. Their chili cheese hot dogs and fish'n'chips were delicious, too.

Boardwalk Fries generally does a decent job of it. There was one in particular in DC that made absolutely awesome cheese fries.

I agree with the Fake Velveeta Style cheese being the best for cheese fries, and there is a place down the road from the University of Delaware called... Cleveland Avenue Steak Shop I believe which has the perfect fries, the kind that don't need salt but taste well salted, brown on the outside and soft potatoes on the inside, and THEN they absolutely smother it with cheese... so much of it you have to eat with a fork and it gets just everywhere. There is not a fry less than half covered with the awful heart-stopping creamy goodness.

Any other kind of cheese is strictly for nachos, ESPECIALLY queso. That just is not for fries at all and none should dare suggest otherwise.

Also let me take the time to say, love the Ikaruga symbol nilcypher. High quality!

Cheese always fails to impress me. I cover my fries in salt, lots and lots of salt; I'm suprised I've not had a heart attack.

I loves me some poutine with some squeeky cheese curds. The Best Poutine is also the stuff you can make yourself, with proper spiced poutine gravy.

However on non-cheese fry topics, the best fries I've ever had were from a Fry Cone Stand just outside of the Red Light District in Amsterdamme, they had curry sauce and were fnuckin delicious.
