I used to think guitar solos were cheesy ever since I sat in chapel as an awkward six year old watching the other kids play air guitar to some kind of children's Christian rock song. I was thinking it was really lame and said to my friend that "we're supposed to think it's cool just because it's got electric guitars in it".
The first heart-meltingly amazing solo I listened to was Hysteria by Muse, sitting on my bed pressing my earphones into my skull. The chorus and lyrics were intensified by the solo rather than it being a kind of break from it, if that makes sense.

My current favorite solo would have to be a tie between Helloween's Halloween, and the one in Iced Earth's Travel in Stygian, which also has my favorite outro of any song.
