World of Goo start up screen! Said some funny stuff there, all though the only one I can remember is "scraping funds"... Also Mokey Island for the PS2 had Loading written in pig latin at the very bottom of the screen, that made me laugh.
EDIT: Ooooh! Also Beautiful Katamari's ones where the giant face hovers around spewing words. Sometimes it's fun just to work out what the hell he's saying.

I saw my brother playing some basket ball game, and the loading screen was some guy playing basketball. All i could think is, "what exactly are you loading?".
I always liked the installer from the original Command and Conquer. It pretended it was hooking your computer up to the pentagon or something
Incidentally, I see someone above mentioned that they liked little mini-games on loading screens/installers. I swear I read somewhere that BANDAI own the patent to this idea. Which, frankly, sucks ass.

Assassins Creed for sure. I always sprint in one direction trying to hit the barrier. (Ive hit it twice so far in about 80+ hrs of gameplay.)
Left 4 Dead ones really set the tone but they are nothing really special.

The opening load screen to The Sims games was always good. Like, there would be silly little captions for what they were doing, like "Chlorinating Carpools" or "Spraying For Bugs" or things like taht.
