My favorite is the Shawshank Redemption, I never noticed a special effect, but it was one of the best movies I'd ever seen.

Boondock Saints or Spartan.

I'd have to check again, but LA Confidential also comes to mind.

Finally Blade Runner, it predates CG in films (mostly), and as a result, still holds up 27 years later.

Nitpick for the overeducated, all of these films have special effects (which includes squibs, and the quacamole gun), and IIRC all four use visual effects (Blade Runner has loads), just not CGI.

Meet Joe Black. There was very little in the way of special effects and the entire movie was carried by Brad Pitt and Anthony Hopkins.

While you may consider it to be attempting special affects, I like to look at it as old fashioned cinematography. I speak of course of the classic, ladies and gentlemen... Metropolis. Dated 1927, made in Germany and filmed black and white. Still to this day, it's freaking awesome.

Casablanca comes to mind. I love that movie. It is old school epic goodness.

Also Fight Club has very little in the way of real special effects. That movie kicks ass.
