Persona takes my soundtrack cake any day. The tunes are catchy and I have been caught whistling the Iwatodai Station theme more than once.

Assassin's Creed II definitely had the strongest and most listenable soundtrack of the series, and of those the song Ezio's Family has the most intense emotion, and both "Wetlands" songs (escape/combat) are adrenaline pumping on a downright primal level. The entire soundtrack is Jesper Kyd's best work in my opinion.

Metal Gear Solid as a series has had stellar music throughout, and as someone mentioned earlier, the Killzone series has an all around amazing OST. Bioshock also, although to a lesser extent. It had some good songs, especially "How She Sees the World" from Bioshock 2. Alan Wake had the song "The Poet and the Muse" written specially for it, and it gave me chills the first time I heard it. That doesn't happen to me with music very often.

Chrono Cross wins. Why? Type in Chrono Cross on youtube's search bar and the first options are the games OST. Not walkthroughs, or bosses. The BGM

This being the best one ever

Also, what is this from?
Red Dead Redemption, I believe. I'm still going through my favourite sounds, although in my memory there's more than a fair few.

Also I admire the great restraint of people for NOT putting in "Still Alive" or
"Now You're Gone."
from the Portal games.

EDIT Sod it, this is the song that makes me smile every time I hear it in game:

I went back and played Donkey Kong Country and couldn't believe I had forgotten this:

I love the transition from light-hearted pirate medley to...well, that. I loved that and can't believe I forgot about it!

Also, the soundtrack for Final Fantasy Mystic Quest in general has an awesome soundtrack. I know I've gushed about it before though so I won't link.

For now, I'll leave you with this:

If DOOM 4/Rage/Quake-whatever-the-hell-comes-next has a title theme anything like this one, I will cry with rock-induced pleasure.

Kickin' it old shoool:

Sometimes I mod this music into other games to play instead or the original score. Music was so important n the early days when polygons, textures and animations were at a premium, an awesome soundtrack could really make the difference to completing the feel of a game.

But not just back in the 90's also this generation:

PS: I have never played this game but this music... fuck, I LOVE IIIIIITTTT!

Also this remix:

Heavy Rain, Demon's Souls, Heavenly Sword, Okami, LittleBigPlanet games, Final Fantasy (sometimes...), inFamous 2, some Mass Effect, MGS4 was good, Super Metroid (imagine those midis orchestrated and it's unbelievable lol), Mirror's Edge (ambience), Pixeljunk Shooter games, Red Dead Redemption (as long as you are in the mood for western sounds), and lastly WET had a kick ass soundtrack.

Midna's Lament, Molgera music, sacred grove music... Zelda music, pretty much.

What do all these wonderful songs have in common? Inon Zur. I have to say that he's definitely one of my favorite game composers in the world.

I know it's not an original piece but I really want to include it. Moonlight Sonata in Resident Evil (1996)

I don't know what it was about this, a female SWAT commando lost in a mansion full of zombies, monsters and fiendish traps and puzzles... stopping to play this hauntingly elegant tune on a piano.

It's classic Resident Evil in a nutshell.

also, the Silent Hill theme:

Ahh, my (messed up) childhood.

Ocarina of time had a completely mind-blowing soundtrack.

The temples all had these atmospheric background music that were extremely unsettling and added to the mystery. I'm still haunted by the forest temple music.

But just as great are the epic "anthem" pieces. They really got you pumped to adventure. The fields music are probably the most remembered, but i have a soft spot for this gem.

My favourites have for the most part already been said, that said I remember Dreamfall: The Longest Journey had a couple of fantastic music pieces composed for it:

Very mellow, not normally the sort of music I listen to but I like it.

I grow tired of always having to come into these threads and mention Chrono Cross. One of these days, people will understand, but until then, it's good to see others take up this cause as well.
