Red Dead Redemption has some great music, Grand Theft Auto: Vice City has some fantastic music.

My favourite at the moment is probably Downstream by Shira Kammen, from Braid.

Halo comes up pretty quickly, it's gotta be one of few games I bought the soundtrack for (well Halo 2 actually).

Failing that, the Turrican series, which I also bought the soundtrack for.

Oh yeah, and Umineko no Naku Koro ni. I've got my playlist down to my 50 favourite tracks.

EDIT: Oh and Aquaria. I listened to the music from that for like a month, non-stop. Also it helped me study, since there were no lyrics.

World of Goo, 2 guys gathered a dozen random musicians from off the street and put them in a circle around a single microphone in their apartment. It turned out to be in my opinion one of the most creative and awesome video game soundtracks of all time. The game itself is pure awesome as well.

the .hack// series of video games (the first slightly more than the second) has amazing music, it was the first and basically only time i went out and get the soundtrack to a game, legally even!

The winner for me by far is the Katamari series. Each game's soundtrack is quirky, varied, and it always cheers me up to listen to the soundtracks outside of the game.

There's loads of honorable mentions, though. I also love the soundtracks to Super Smash Bros. Brawl, Gitaroo Man, Vib Ribbon, Okami, the SMT: Persona series, the Metroid Prime series, Shadow of the Colossus, and quite a few more.

Final Fantasy has always done music well
and in my eyes especially FF7
it's library was spectacularly atmospheric and perfect

Odin Sphere had some good soundtracks. I sat through the entire ending credits because the music was so beautiful. I also avoided conversations with NPCs between stages since that dimmed the volume of the music.

I really loved the Alan Wake soundtrack, as well as the amazing ambience of Silent Hill 2. As for other games, Half-Life 2 has some great music.
And, surprisingly enough: Terminator Salvation. The game was mediocre, but the music was pretty awesome.
