Remakes are good way for people to play classic games without having to go out and find an obsolete console to play something that will be mangled on a modern display (if it works at all). Even most PS2 games don't run optimally on a new TV, since they never included a 16:9 option.
Besides, this isn't cinema. Polygonal graphics age, and they age hard. FF7, for instance, has some absolutely horrible character models by modern standards. I'm not saying that makes the game unplayable, but no matter how you look at it, it detracts from the experience. New players will have a hard time looking past Cloud's bizarre pipe-cleaner-with-a-bowling-ball-at-the-end arms, and while they ought to be able to look past it, they really shouldn't have to.
That, and old games can be a pain to track down.

They may not be a huge deal, but bad graphics can be an unnecessary distraction. Minecraft doesn't have a story/a setting/characters/etc, so it's not that much of an issue there. The graphics serve their purpose. Graphics can't possibly be that big a deal, after all how many people are playing fucking MINECRAFT.
