Metalocalypse. I really didn't expect to like it as 1: I was never a huge fan of Adult Swim's original programming (I don't get ATHF), and 2: I'm not a big fan of death metal. However, I found it surprisingly funny, and I also liked the soundtrack.
i remember when adult swim actually showed the pool with old people swimming in it, but on topic id say yu yu hakusho when it was on or inuyasha but now the boondocks or titan maximum

I always liked The Brak Show. I remember when Brak and the gang put on the musical Psychoklhoma. It was epic.

Harvey birdman i have the whole series 1-3 on dvd and funny enough its the only cartoon my room mates like.
The Boondocks, obviously. It's one of the few truly intelligent social commentaries on television these days.
Metalocalypse, Venture Brothers, Robot Chicken and Aqua Teen are equally entertaining.
We, however, are forgetting one of the best:
