I only know of Bebop and Robot Chicken, so I'll say them. Robot Chicken seems more of a British show, we're so much more cruder.

Robot Chiken by miles. Love that show.
I also like Aqua Teen Hunger Force and Metalocalypse (especially the soundtrack).

All the rest of the ones I've seen from Adult Swim are... er, not as good...

If my avatar didn't already spell it out, this one. By far. Brilliant, hilarious show. My life won't be complete until I finally have season 4 on DVD! Make with the goods already!
Other notables include ATHF, and Sealab 2021. Is there anything more comforting than the random hilarity of William's Street? I think not.
Honorable mention to Boondocks. Well, 1st season was amazing, 2nd was alright, too many *bleeping* *bleeps* that detracted from the *bleeping* hilarity, though...no comment on 3rd yet...

edit--damn...how could I forget Metalocalypse? I should be locked in a room with Dr. Rockso (and no cocaine) for that lack of mention.

Hey hey. I'm not entirely sure if adult swim can take credit for shows it picked up from other places. Which was a lot of shows actually. Some show were actually made by adult swim and milage really varies there. Some of the first few shows they made were really good. Then around 12 oz mouse thee quality went from being weird and odd to being just plain insane. Sealab 2020. Aqua teen hunger force. and space ghost coast to coast are really good in my opinion.

Venture Brothers is by far the best and the most brilliantly put together. As a metalhead I also love Metalocalypse though I don't consider it to be as well written.

Everything else I enjoy except for some of their really stupid shit like that Tim and Eric garbage and Look around You. Oh and Perfect Hair forever. Oh and 12 oz Mouse. Yeah AS has some really good stuff but also some of the dumbest crap I've ever seen.

Aww man I forgot about that show. THAT was pure epic. I really wish it'd gone beyond just a pilot. I consider Korgoth to be the Firefly of Adult Swim; great concept for a great show that just sadly wasn't fully realized.

That's the whole point of ATHF, and most of Adult Swim programming, it is not meant to be "gotten." I hated it at first but then realized "Hey this is supposed to be stupid and not make sense" and then it started being a lot more funny. But alas to each his own.

I don't like much of their programming now. Never liked Futurama, especially didn't like King of the Hill, Tim and Eric is mind numbing (yeah I know I said ATHF doesn't make sense, and neither does this but its just TOO stupid.) Don't care for Squidbillies and Xander or whatever its called either.

To answer the OP: ATHF, Boondocks, Metalocalypse, Robot Chicken, and sometimes Venture Bros.

Some oldies that are no longer there (far as I know, I'm rarely up that late...) Sealab 2021 and Space Ghost: Coast to Coast

EDIT: Home Movies is an good runner-up, as is Moral Orel and Harvey Birdman. Actually Frisky Dingo had some bright spots too.

I have trouble sitting through Robot Chicken and Aqua Teen Hunger Force, though. They're just irritating.
I agree with you 100% about Venture bros. I love it!

I say Robot Chicken, or Moral Orel. What started out as a parody of Davey and Goliath those old 50s style family shows became one of the darkest most psychologically intriguing cartoons put to cable.

This is a tough one. Not counting anime I would say my favorites are The Mighty Boosh, Venture Bros, Mission Hill (back when they showed it), and The Brak Show (back when they showed it).
