It doesn't get much better than Metal Gear Solid.

Bioshock did a good job, though.

Half-Life 2 has some of the most believable dialogue I've seen; it's so natural that you don't notice it as acting.

I suppose a good corollary to this thread would be "best writing in a game" ~searches for that thread~

Either keifer sutherland (jack bauer) in call of duty five or Chris and Sheva from resident evil 5.

Although Bioshock's were pretty good too

DMC 4
Mass Effect
Baldurs Gate (all of them)
Chronicles of Riddick: Escape from Butchers Bay

Can't think of anymore...

Will resist saying Halo for now.

OH and the Max Payne series! They are brilliant.

Must be the GTA series, mostly San Andreas. Can you name a game with better and more popular voice actors than SA?
San Andreas was terrific, but I actually prefer Vice City : Ray Liotta as the heartless mobster protagonist, Tubbs of Miami Vice as your white-suited partner, Burt Reynolds as a shady landlord and Dennis Hopper as a porn director - just well-cast all-around.

Which makes me wonder what happened to the series, when no matter how fun GTA IV was you never get past your fucking cousin! I don't care how much of a part of the actual game it was, it's something that never goes away.

Jennifer Hale as the female Shepard in Mass Effect is simply the best. You really feel that she means what she's saying.
Everyone in Call of Duty 4:Modern Warfare
Assassin's Creed had some amazing voice work done there
The voice work for BioShock is both deeply moving and deeply disturbing at the same time.
Half Life's voice work is just simply phenomenal

for me,

Anthony or Ben Carmine from the gears of war series, it just seems like they captured the scared young solider on the front lines so well with him

hmmmmmm...
I'd say for me its a tie between Grim Fandango and Fallout 3, GF for the variety and great lines and delivery, Fallout 3 for similar reasons, and of course 3 dog awoooooooooooooooooooo ;-P
