Enslaved is really beautiful and colourful, so there's that. Valkyria Chronicles is also really awesome looking, with a sort of pastel/watercolor look to it's aesthetics. It's a turnbased strategy/JRPG-hybrid that actually works really well. I assume you have a PS3 since you played Uncharted, Shadow of the Colossus and are thinking about Okami, so Journey is also really good. If you have a 360 as well, then Gears of War 2 and especially 3 also have some really stunning and colourful environments.

Fantastic use of a variety of colour palettes as well, its diverse and beautiful and genuinely fun to play.

Also the first two Crash Bandicoot's have some really beautifully colourful levels; specifically the ones in the temples at sunset... I think ones literally called sunset vista..
Oh and if you have a wii, Donkey Kong Country Returns is actually really great from a visual/colour perspective.

The first thing I thought of was Jet Set Radio Future. Colourful, fun gameplay and a great art style.

Oh bloody hell, everyone. Ninja'd on pretty much all of my suggestions.

-Okami
-Rayman Origins (legends too when it comes out. Come on, how can they fuck up a follow-up to Origins?)
-Sly Cooper (1-4. 4th game made by other people, but don't let that deter you)
-Ratchet and Clank (1-3, Deadocked was ok but lacked colour compared to the other game, and the 3 Future games)
-Jak and Daxter (1, and while 2-3 lack the lush colours, hold your judgement until you see Haven Forest in HD)
-Beyond Good and Evil
-Mario Galaxy
-Jet Set Radio
-Journey
-Bastion
-Spyro 1-3
-Crash 1-3 (not a fan of the first one, but it's not BAD)
-Banjo Kazooie/Tooie
-Sonic Colours/Generations
-Klonoa (original first game is on PS1 and ported to Wii. Second game is on PS2. Very cutesy and easy, but fun)
-Legend of Zelda: Wind Waker (being ported to Wii U too, though I guess most Zelda games are colourful and epic)

So ya, most platformers out there fit the bill of "coloruful" and "epic". Personally, I think Ratchet and Clank Future: A Crack in Time is among the best looking games this generation. So much colour and detail!

I would suggest Conker's Bad Fur Day, but physical N64 copies are hard to come buy (and don't come cheap) unless you buy the not as nice looking Xbox port.

Another one is Enslaved: Odyssey to the west. I thought the new Bionic Commando was fairly colorful and fun as well.

Other good suggestions so far that I'll echo: Psychonauts, Ratchet & Clank and Rayman Origins.
All of those!! :D Enslaved is a great game too!

Resonance of Fate is also a very pretty game, and very good once you get into it!

And any Mario and Sonic games... like seriously...

Worth noting that Okami HD is available on PS3 for free if you're a PS Plus subscriber (for the duration of your subscription however, not a purchase). I'll be getting a 90 day membership myself soon considering it costs somewhere around 12 pounds and between Okami, Infamous 2, The Cave and the occasional discounts, I feel it's well worth paying for atm.

Some Mario games? They are always pretty colorful. Most Nintendo games seem to be, which is nice in my opinion.

bayonetta, psychonauts, most of the bit.trip games (i would recommend runner myself), bioshock infinite i found pretty colourful, bastion, rayman 1 & legends, ratchet and clank (one of my favourites being a crack in time) audiosurf, borderlands 1 & 2. pretty sure most of these are colourful in one way or another, and all of them awesome

I didn't mind the sidequests. Of course, I didn't overly bother with many of them but I didn't think they were all bad. Some of them gave pretty fancy rewards for when you're starting out. But I still maintain that finding your favorite destiny's the best way to get the most enjoyment out of it. :p
