Hey, Escapists! I know there's some cooks out there among you guys. And I need your help.

My neighbor works for a shipping company. When a box of food drops off the back of the truck or gets damaged in some way, they allow their workers to take what was in the box home. My neighbor, being a kind old lady, gave me one such box.

This box was full to the brim with bags of frozen chicken breasts.

My freezers are now completely full of layers on layers of chicken. And because I need to have something other than chicken for variety's sake, I want to cook as much of this chicken as I can.

Does anyone have any good recipies or makings that include chicken breasts?

Wikihow might help - My favorite thing to do is make chicken with curry and chilli;
Cooked then soaked in the combination for 45 minutes.

^^ Maybe that helps?

A little bit. I'm looking for specific tried-and-true recipes, though.

Bread two pieces of the chicken, fry it, then use it to sandwich some bacon and cheese. The Double Down sandwich, except yours would be awesome---KFC's is not.

Yeah, I've gotten a lot of recommendations for curry. I'll try it.

And I WAS planning on grilling some, I just have no idea what to do with it all when I finally get finished grilling them.

Look up some unique marinades on the internet.

Try Jerk chicken, with extra jalapeno (or less if you don't have bread).

You have a grill? Than I have another one for you:

1) Poke breasts with a fork repeatedly and all over.
2) Marinade breasts in Italian salad dressing for at least 1 hour.
3) Sprinkle with some herbs and spices.
3) Grill.
Sounds great, added to the list.

I'll give you the only non-basic recipe I know. Ever heard of oyakodon?
<color=aliceblue>Line break

2 thawed chicken breasts (boneless, preferably skinless too)
1 white or yellow onion
4 shitake mushrooms
3-4 garlic cloves (optional)
4 eggs
1/4 cup of water
1/4 cup of soy sauce
1/4 cup of mirin (rice wine)
2-3 tablespoons of sugar

Set the mushrooms to soak (allow between 30-60 minutes); upon finishing, remove the stems and cut the mushrooms into quarters. Chop the onion into bite-size pieces or slightly larger (lot of leeway with this), and chop up the garlic (if desired). Cut the thawed chicken into chunks or strips.

In a 26" or 28" frying pan, add the water, soy sauce, mirin, and sugar, allow them to mix, and bring the mix to a boil on an oven. Once boiling, reduce heat to medium, add the onion, mushroom, and garlic (if any), and lightly stir for half a minute. Add the chicken, and continue mixing and stirring for 3-4 minutes or until chicken is cooked.

Reduce the oven heat to low and cover the pan. Break the eggs into a bowl, and use a fork or whisk to mix the whites and yolks together. Pour the resultant mix onto the rest, re-cover the pan, and let it cook for 1-2 minutes while the egg sets (this doesn't take long, even after removed from heat). Turn off the heat and let it sit; keep covered until you're ready to eat.

The one thing I managed to teach myself to cook while in Japan. Goes excellently over steamed white rice.

Assuming they're raw and you get sick of chicken, you could always give some to an animal shelter for the dogs to eat (it'd be a REAL treat for them!), I'd recommend ringing up to ask first though.

If you find you have too much, take some out back and whip out the firecrackers.

And I would recommend doing some kebabs.

Just cut some chicken up, fry it on medium, and add korma to the pan when it's brown. Korma is like the best sauce ever...

I'll do this if worst comes to worst: If I run out of recipes faster than chicken.

Just looked "korma" up, and I have to say it looks delicious. I'll see if I can't find or make some.

My favourite is to make Chicken Pot Pie but it's a bit complicated if you're up to it:

Step 1 : Go to a local restaurant (Like an Earl's or Milestones or something) and ask if you can have their Parmesan rinds if they aren't using them. That or buy some parmesan with the rind on it and save the rinds until you have about half a pound.
Step 2: Buy some Homogenized Milk, and put it in a pot with rinds. Just heat the milk so it is warm, not even simmering (its called a scald). After about an hour it you can strain out the rinds and the milk will taste like parmesan. This is called a Parmesan Stock
You can use Parmesan stock for lots of stuff, including Cream Pasta sauces, scallop potatoes, soups, stews, etc.
Step 3: Cook off the chicken with garlic, onions, cooked potatoes, peas, and any other veggies you like (I like corn)
Step 4: Add some Parmesan stock, and reduce it so you it's a bit thick and is coating all the chicken and veggies well, so that it can be placed in your pot pie.
Step 5: Buy some puff pastry dough or pie or tart shells, bake them, making sure they are bowl shaped so you can fill them with your Pot Pie filling!

It's real yummy. The best part is that you can use the stock for Chicken pastas and other stuff for the rest of the week or 2 weeks! Don't forget to season that shit too, dawg.
