Uh, liquid tension experiment (someone already mentioned Dream Theatre but this is a tad more awesome (IMO)).

Cacophony (the band with Becker and Friedman) or Jason Becker's solo stuff (notably the album Perpetual Burn).

Well, since dream theater has already been mentioned, how about Iron Maiden? Maybe they could add a flight simulator as a mini game since Bruce Dickenson is also an airline pilot.

Speed Metal vs Symphonic Compositions...

Both feature music with 32nd spaced Rests and odd timing schemes.

Actually, I pick "Guitar Hero: Kriss Kross", because the entire challenge of playing the game is not ripping the DVD out of the console and obliterating it with an air hammer.

Well the obvious one for difficulty is GH: Dragonforce, and then probably GH: Judas Priest, but I'd say that the hardest tracks on the GH games were the Slayer ones. I could scrape through Through the Fire and Flames on expert, but not Raining Blood. GH: Slayer would probably be quite bland though.
So I'm gonna say that they should make GH: Iron Maiden, not because it would be hard, but because those songs would be so damned fun.

I hate rhythm games like Guitar Hero and Rockband with a passion, but I would seriously go out and dump cash on that if it ever came out.

My vote is for Guitar Hero: SLAYER or Guitar Hero: Bullet For My Valentine

Could you imagine how many kiddies would be screeching after they had to play something like Angel Of Death or Fever on those dodgy little plastic contraptions :p

Oh don't get me wrong, I like Slayer, I just always find their songs on Guitar Hero quite bland because it's so thrash. I don't think it's the right kind of music for a rhythm game. One song is alright, even if I can never get past them with more than 3*, but I think the novelty would wear off. A band needs a huge and varied catalogue of songs for a GH game to work, like the Metallica one, worked brilliant because of the variation. Slayer have some variation, but not to the same extent, which is why I don't think a full GH game in their honour, though well deserved, would be a fulfilling and enjoyable experience.

And yes, GH: Pantera would be finger bleedingly amazing.

Not so much that the music itself will be really really hard to play, but that amount of awesomeness cannot be contained on a mere disk. 'course you could also say the same about any really really awesome band.
