I recently cam into possession of three classic systems; the PS1, SNES, and Dreamcast. Any good games that the Escapist recommends?

Shenmue's pacing is very deliberate, OP. It's, for lack of a better word, slow as shit.
But stick with it. It is phenomenal once you give it some time.

And Earthbound for the SNES. If you can find it, that is.

For SNES I recommend:

Super Mario All Stars (especially one that comes with Super Mario World if you can find it), Chrono Trigger, Illusion of Gaia, Super Mario RPG, Super Mario Kart, FF III (6), Earthworm Jim 1 and 2, Earthbound, Super Metroid, Donkey Kong Country 1 and 2 and Secret of Evermore. There are some others, but I can't think of them off the top of my head.

Though, good luck with finding some of these titles. Some of these can carry a hefty price depending on where you find them, and some may just be hard to find in general, but with good reason.

That really depends on the genres you like. I mostly like RPGs, so I'd recommend getting Legend of Zelda: A Link To The Past, Chrono Trigger and Earthbound for the SNES.
Playstation - If you're in the US, you should try to check out Parasite Eve. But check out Vagrant Story, Metal Gear Solid, Star Ocean: The Second Story and Silent Hill
I never owned a Dreamcast, so I wouldn't know. As one person above me suggested, check out ShenMue. That is supposedly an amazing game.

Get Phantasy Star Online for the Dreamcast, I never played it on the dreamcast, but that was the first console it came out on I think. I have tons of fun playing that game, except for when the stupid dragon doesn't drop the epic weapons he is supposed to drop...

Also, this is quite off-topic, but I'm really tired of people who keep going on about how hard and/or expensive locating SNES games is. They really bloody aren't. They are in abundance, you just need to know where to look, and they are almost always cheap as chips. People make being a SNES collector sound off-putting.

Sure, a lot of the sought-after games are really quite expensive, but there are hundreds of hours of perfectly fine dirt cheap entertainment in those carts out there. Just learn where to look. Remember, the internet is your guide.
