Have you watched Full Metal Alchemist: Brotherhood? It is based more on the Manga, it is a bit longer, and the start of it is very similar to the start of the original but it's dub is just as top notch and the story is like 1000% times better. In regards to Kurosawa, they could have been talking about the style of cinematography, musical score/undertone or the general style and tone of story telling. And from what they've said about the visual style (not the animation style) that they want, they chose people who had a lot of experience with that particular style.
Think of it this way, if you wanted to make a dialogue heavy, or character driven movie you'd want a director more like Tarentino or Scorsese rather than someone like Friedberg and Seltzer or Boll.

I don't know exactly how to judge this, on the one hand I'm excited that there's a DA film in the works, on the other hand I've never seen a decent game-to-film adaption to date (nor the reverse), so if anything it'll be a good film in its own right, but will be raged at by fans by not being good enough, accurate enough, exactly how they imagined it or any combination thereof.
