Lucifer's Call had a good one, especially if you decided to storm Heaven. But I'm going to say Omega Boost, every boss in that was amazing.

Pretty much every boss fight in the Legend of Zelda series.

Fighting Sephiroth to One-Winged Angel at the end of Final Fantasy VII.

Does the final song in Elite Beat Agents count? 'Cause if so, that. SO VERY MUCH THAT.

Also, if the final case in the second Phoenix Wright game counts, that's up there too.

There are lots more, but I'm tired.

The final battles with Bowser in Super Mario Galaxy were pretty epic, if a little too easy.

I enjoyed fighting archdemon in DAO quite a bit
I also liked fighting nemesis in ffx

MGS 4 final battle. One of the highlights of the game(even though it is about 4 hours long).

ok .. might sound dumb but i loved fighting wesker in RE5.

I would like to throw something else in here .. the worst ending EVAR is tied between gears of war 2 and fable 2

Whilst its pretty easy, and kind repetative to play. It looks great when you see yourself playing it =P

Haven't any of you played Bayonetta? There's one boss who the size of the moon and has eleven healtbars (not really, but almost). Not wishing to spoil anything I can't really put it here... oh... wait...
You fight a HUGE angel dragon with two heads. The fight takes place in a coliseum like place, and the battle takes like an hour to finish. THAT is epic.

OT: the first part of the fight against Lucifer in Dante's Inferno, the second part is reasonably epic as well. The fight in Dead Space which is like being trapped in a tumble drier with a Shoggoth. Both of those boss battles are pretty damn visceral. [sub]I'm sorry. I am a really bad person[/sub]

Diablo in Diablo II still stands as one of the most epic boss battles in my book.
