Depends on what you're looking for in a game. The gameplay in EVE is as boring as yahtzee describes, and if you just want a game to play by yourself and you judge your gaming by the interface, absolutely look elsewhere.
However, EVE has one of the most sophisticated political environments I have ever seen produced in a game. In the past month one of the largest alliances, Goonswarm, wrapped up their war with the other of the largest alliances, Kenzoku (previously BoB). That war lasted a year. Now that they've defeated them, they now hold control of a couple entire regions of space. You say you've played the demo, so you have an idea of how much territory that entails. That is just two alliances out of hundreds, maybe even thousands.
EVE is set in a ruthless, cut-throat universe, and short of the worst cases of griefing the newbies, CCP will never step in when a player screws another player over. So thieves, pirates and spies are common. So when you leave station, there is always a risk, and that risk never comes from the NPCs. It's always from other players. One of the best sayings that I've heard in EVE is "If you're in EVE and you find yourself in a fair fight you're not playing correctly." So the universe truly is entirely open to be played the way you want to play.
So while the combat with NPCs is boring as watching paint dry, (and mining is far, far worse), combat with other players is the most exciting I have ever experienced. Bar none. I have yet to find a FPS that even comes close to the adrenaline rush of hunting down and killing another EVE player.
Another thing worth mentioning is that EVE tops the charts for games for people with social lives. This might seem contradictory. But the fact that you can queue up 24 hours of skills to train (plus there are many skills that take up to weeks to complete), you can only put in a couple hours every couple days and still keep up to your friends in game. I often get sent out of town for weeks on end for work, yet I can keep my character relevant in EVE. There are a number of people with families that I play with and they're in the same boat. They can play as long as their lives will allow and yet when they log in, their character has continued to grow.
