I laughed at MOH Frontline where the man is catapulted three times by land mines. It's supposed to be serious game but that death was like a cartoon.
To me, none has made me laugh as much as Monkey Island did.
Oh yes, KOTOR 1 too. AK-47 is a bit fun at first, but it soon becomes the same, predictable and annoying. However, Jolee Bindo, that's fun. Could use removal of old geezer jokes, but fun.

Portal and Duke Nukem 3d immediately come to mind. The GTA games had plenty of OMGROFL moments too. Lots of games have made me chuckle at the occasional funny line, like Ghostbusters and most Bioware games, but not that many have made me laugh uncontrolably.
Nearly anything Glados says in portal. If it wasn't for Tim Shafer I'd just curl up and accept that game writing would never get any better.

Armored Core 3: SL - In one particular match, I had been playing against a friend on the bridge stage. We were both using light mechs. Mine had a Karasawa and a blade, his had a blade and some back weapons. I managed to run out of ammo before he did, and was chasing him around under the bridge attempting to blade him when I decided it was time to drop the Karasawa. He happened to be coming up underneath me at the time, and tried to swing his blade at the exact moment I dropped my gun. Since the blade button is also used to pick up discarded weapons, he suddenly found himself holding a massive gun that his mech wasn't able to support, and the sudden weight killed his energy supply and caused him to plummet to his death before he realized what had happened.
