I get that I should save feeling a lot and I'm always thinking about how I'd scale buildings due to to much Assassin's Creed.

I fell down the stairs a few weeks ago after playing a few hours of the new Prince Of Persia game. As I was falling I found myself looking for the rewind time button

That, and do a quicksave.

Also, HL2 made me want to break all the cargo pallets I saw, and Splinter Cell made me want to headlock people and knock them out.

After playing the SC2 beta, I tend to have the urge to "check my base, make sure I'm building probes" during everyday activities.

Activities that have nothing to do with Starcraft. I'll just be playing, say Red Dead Redemption, then I'd pause the game and think "I wonder how my probes are doing..."

On occasion that's happened. I've found myself wondering about the alchemical effects of the plants in my back yard after playing too much Oblivion or plotting a path up a wall after playing Assassin's Creed.

I've tried to quicksave before doing things a couple of times in real life.
I've done this as well. It went a little bit like this:

"This is gonna be awesome" Quicksave
Run, run, jump, fall, snap of arm.
"OOH GOD! QUICKLOAD!"

OT: After playing Banjo Kazooie N&B for too long while loopy on painkillers, I almost tried to "Remove some weight" from my car.

I played Zelda: Link's Awakening on the original gameboy when I was a kid for so long that when I turned the gameboy off or much more likely it ran out of batteries I would hear the music just as clear as if it was on. This would go on for hours after I stopped playing.

edit: just remembered after playing Burnout for several hours at a friends house (Think it was takedown, but could have been revenge, but either way it was when that game was the BEST looking driving game in existence)on the way back to mine I really had to catch myself from starting to veer over to the empty oncoming traffic lane to some extra boost. Later when I told my friend he said he basically was almost doing the same thing esp when it came to almost traffic attacking.

After a long GTA session, I fell under the impression that it was only OPTIONAL to stop at a red light.

Luckily, I chose to stop.
Then I was struck by the realization that GTA rules don't apply in real life.

One time I had my bag searched by police before boarding a train, and without thinking I referred to it as "Spy-checking." That was when I knew I was playing too much TF2.

I do this all too frequently and have multiple examples. When I was playing through MGS3, I took a pee break and I thought I heard an alert and wanted to go into hiding. After playing Red Dead for far too long, I walked to the grocery store, and on the way I saw a woman's flower bed and had to fight the urge to pick them. When I was still playing Maple Story, I drove past roadkill and thought for a split second I needed to pick that leather up. I'm sure I had a similar event in Oblivion like many others, I just can't remember it.
