I must confess a confusion with the love of David Eddings. His writing is pleasant, but it lacks the depth of a lot of the really good fantasy out there.
Robin Hobb is an extremely good, if a little contrived. Assassin's Apprentice is a good place to start there. Good character development - nice moral ambiguity without being contrived. The angst of the main character can become a little tedious though. The Soldier Son Trilogy is fairly decent as well.
J.V Jones and the Baker's Boy Trilogy is excellent as well. She has a wonderful sense of style and manages to create interesting characters and relationships.
Already mentioned is Alistair Reynold's Revelation Space - It's an excellent cybergoth space romp - a little too much crammed into one book, but very creepy and atmospheric.
The best author I've ever encountered though, is Dan Simmons. Read Hyperion. He's a ridiculosuly erudite sci-fi author / classicist. Then get the sequels. His command of language is quite unparalleled. Also, read Ilium - it's a massively potent retelling of the siege of Troy, only infinitely sexier. With space-robots. And just... pure awesomeness.
