If you're in the mood for something different, and I mean *really* different; try China Mieville's Bas-Lag cycle of Perdido Street Station, The Scar, and the Iron Council. They're unlike any other fantasy series I've ever read.

Also, give Neil Gaiman's American Gods and Neverwhere a look.

Oh and Micheal Moorecock's Elric series and Ursula K. LeGuin's A Wizard of Earthsea are absolute classics.

Might I make a few suggestions....
The Kingkiller Chronicle by Patrick Rothfuss (two books out now The Name of the Wind, and The Wise Man Fears)
The First law Trilogy by Joe Abercrombie (also check out his other two books Best Served Cold, and Heroes)
Malazan Book of the Fallen by Steven Erikson,
Mistborn by Brandon Sanderson
David Eddings work is very good start with the The Belgariad and The Malloreon Series.
also Check the following short fiction if you can find it...
Elric of Melniboné by Micheal Moorcock,
Fafhrd and the Gray Mouser by Fritz Leiber

there that should be a good start...

Peter V. Brett's Demon Cycle is really promising. The first two books, The Painted Man and the Desert Spear brings new life into the fantasy genre.
I can also second China Mieville, David Gemell and Neil Gaiman. Stephen King's The Dark Tower is also worth reading.

I never really liked Eddings, I find his characters to lack depth and his plots to be simple ripoffs from Tolkien with little new imagination. The Sword of Truth series suffers from a overpowered main character, and those books too get a bit repetitive, but they are certainly better than Eddings. The Wheel of Time series did have some major problems in the middle, with tons of unresolved plots, too many characters and no end in sight. I put it down some years ago and promised my self that I'd finish it when the last book was published. It's going to be a long read...

I'm partial to Neil Gaiman. He doesn't normally do series, but he's a top-notch writer, without a doubt.

At the risk of looking like a gigantic fucking nerd, and in the interest of suggesting something I haven't seen already in this topic, I also rather enjoy the translated versions of Hajime Kanzaka's original Slayers light novels that Tokyopop put out. I don't think they've done all of them, though...

Since the amount of ninja on this site is extraordinarily high, the only thing I can offer that hasn't already been said is The Iron Elves series by Chris Evans.

If you wanted urban fantasy I would've had more to suggest.

Dude, you want Steven Erikson in your life. LOTS of books about a thing called the Malazan Empire. Amazing characters, stunning story telling and perfect fantasy. It follows armies, gods, cards, assassins and barbarians. They are extremely long books but I have constantly found myself getting more and more to continue the fantasy.

I think this was the first set of books that made me go, "WTF! No! He is too freakin' awesome to die, how can they do that?! you bastards! D;"

Artimus Fowl series is really good and the Night Angel trilogy is a very serious but well written story
