One Piece - a series I don't like - had one of the most memorable openings I remember.

The animes with the best soundtracks I've ever heard are Eureka Seven and Hunter X Hunter (2011). Usually I don't notice the soundtracks for things other than games, so you know our soundtrack is amazing if it catches my attention.
