Futurama, although the newer stuff seems to have lost something, like they're trying to ape Family Guy, thus totally missing the point.
I also love Venture Brothers (one of those rare cartoons that actually gets better as it progresses).
For defunct shows, i'd have to say Harvey Birdman: Attorney at Law (great from start to finish), Clone High (cancelled wayyyyy too soon), and Aqua Teen Hunger Force (yes, it's not technically defunct, but only the first 3 seasons were any good).
Not at all a fan of South Park (1/3 of the time it makes me laugh like i'm going to die, the other 2/3 it makes me want to puke), Family Guy, or American Dad. They can be funny, but they just bug me for some reason.
